Homemade mint jelly...

Ingredients:
1 cup Mint Leaves (either chopped fine or wrapped whole in a cheesecloth bag)
4 cups apple juice
4 cups sugar
1 box powdered pectin
6 drops green food coloring, optional

Directions:

Cook as directed on the box of pectin. If you choose not to have the chopped leaves in the jelly and you used the bag method. Remove the mint bag before you pour into your jars.

How about just try this instead,a bunch of mint leaves, half a teaspoon of sugar, half a cup of malted vinegar.Combine all and add to roast lamb.
This is an Australian recipe and is very good,as I have tried mint jelly and this is a lot better

I would buy the mint jelly. I am not sure of the recipe although it involves mint leaves.
