LEMON BLUEBERRY SURPRISE MUFFINS
3 eggs
3 tablespoons oil
1/4 cup heavy cream
1 1/4 cups vanilla whey protein powder
2 teaspoons baking powder
1/3 cup Splenda
1/4 teaspoon cinnamon
1 tablespoon grated lemon rind
1/2 teaspoon grated orange peel
1/2 cup blueberries
3 ounces cream cheese, cut into 9 small cubes
non-stick spray or paper muffin liners
Preheat oven to 375 degrees. Line 9 muffin tins with paper liners or spray with non-stick spray. Combine the eggs, oil, and cream; stir to blend. Add the whey powder, baking powder, Splenda, cinnamon, lemon rind, and orange rind.
Stir until just combined. Do not over stir or muffins will be tough. Fold in the blueberries gently.
Spoon 1/2 the batter into the prepared muffin tins. Place a cube of cream cheese in the center of each. Fill with remaining batter, making sure batter goes completely over and around the cubes of cream cheese.
Bake at 375 degrees for 8 to 10 minutes, or until muffins spring back to the touch and no longer look moist on top. Serve warm.
Makes 9 muffins.

INGREDIENTS
* 3/4 cup all-purpose flour
* 3/4 cup whole wheat flour
* 3/4 cup white sugar
* 1/4 cup oat bran
* 1/4 cup quick cooking oats
* 1/4 cup wheat germ
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1 cup blueberries
* 1/2 cup chopped walnuts
* 1 banana, mashed
* 1 cup buttermilk
* 1 egg
* 1 tablespoon vegetable oil
* 1 teaspoon vanilla extract
DIRECTIONS
1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan, or line with paper muffin cups.
2. In a large bowl, stir together the all-purpose flour, whole wheat flour, sugar, oat bran, quick-cooking oats, wheat germ, baking powder, baking soda and salt. Gently stir in the blueberries and walnuts. In a separate bowl, mix together the mashed banana, buttermilk, egg, oil and vanilla. Pour the wet ingredients into the dry, and mix just until blended. Spoon into muffin cups, filling all the way to the top.
3. Bake for 15 to 18 minutes in the preheated oven, or until the tops of the muffins spring back when lightly touched.

EASY FRUIT MUFFINS
1 1/2 c. self-rising flour
1/2 c. sugar
1/2 c. milk
1/4 c. oil
1 egg
1 c. blueberries or any fruit
Mix flour and sugar. Add eggs and liquids. Fold in fruit. Pour into muffin tin (paper lined or greased). Bake 20 minutes at 400 degrees. If using frozen fruit, DO NOT DEFROST.
I tried this and it was great using black berry's raisins and Cinnamon bananas etc.....

Chocolate Chocolate Chip Muffins
INGREDIENTS
6 (1 ounce) squares semisweet chocolate
1/3 cup unsalted butter
3/4 cup buttermilk
1/2 cup white sugar
1 egg
1 1/2 teaspoons vanilla extract
1 2/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mini semi-sweet chocolate chips
DIRECTIONS
Preheat the oven to 400 degrees F (205 degrees C). Line 12 muffin cups with papers.
In a small saucepan over low heat, melt the semisweet chocolate together with the butter. Let stand until cooled, about 10 minutes.
Lightly beat the egg. In a small bowl, stir together the chocolate-butter mixture with the buttermilk, sugar, egg, and vanilla, until blended well.
In a large bowl, stir together flour, soda, and salt. Make a hole in the center of the dry ingredients, pour in the chocolate mixture, and stir until just combined. Stir in the mini chocolate chips. Spoon the batter into the lined muffin cups.
Bake at 400 degrees F (205 degrees C) for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean. Remove muffin tin from oven and let stand at least 5 minutes, before removing the muffins and letting them cool on a wire rack. Serve warm or cooled; can be frozen as well.
Lemon Muffins
INGREDIENTS
2 cups all-purpose flour
1/2 cup white sugar

1 tablespoon grated lemon zest
1/2 teaspoon salt
3/4 cup milk
1/3 cup vegetable oil
1 egg
DIRECTIONS
Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
In a medium bowl, combine flour, sugar, baking powder, lemon zest and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
Fill cups 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.
Strawberry Oat Muffins
INGREDIENTS
1 cup rolled oats
1 cup buttermilk
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 egg
1/4 cup vegetable oil
3/4 cup brown sugar
1 teaspoon vanilla
1 cup chopped fresh strawberries
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease and flour a muffin pan, or use paper liners. In a small bowl, combine oats and buttermilk, and let stand 5 minutes. In a medium bowl, combine flour, baking powder, baking soda and salt; set aside.
In a large bowl, beat together the egg, oil, brown sugar and vanilla. Blend in the oat mixture. Stir in the flour mixture, just until moistened. Fold in strawberries. Fill muffin cups 2/3 to 3/4 full.
Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center comes out clean.

INGREDIENTS
1 1/2 cups all-purpose flour
3/4 cup white sugar

1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
Bake for 20 to 25 minutes in the preheated oven, or until done.

4: Bake for 12 minutes at 350 degrees.
5: Remove from tins and serve warm or at room temperature.

Combine first 3 ingredients in a large bowl; make a well in center of mixture. Beat eggs until foamy. Stir together eggs and butter, add to dry ingredients, stirring just until moistened. Place foil backing cups in muffin pans and coat with cooking spray; spoon batter into cups, filling two-thirds full. Bake at 350 for 20 to 25 minutes or until done. Remove from pans immediately and cool on wire racks.
