Depends how long you would be out there if you are going to be out for a long time I would say from sundown to sun up but if you are only going out for maybe 4 hours I would say 11p.m till 3a.m but how ever long you would be out there I would say have midnight in there somewhere.

If you are bass fishing a lot will have to do with the water temp, water conditions, and boat traffic during the day.
In my experience heavy boat traffic, bright sun, air temps above 86 deg., I will start at midnight and fish until around 9 AM. With most of my quality fish coming between 3 am and 7am.
If it has been cloudy and not as much boat traffic, after sun down until around midnight.
3 days before the full moon till 3 days after I have good luck all night long, especially if it is a clear night.

I like to set up an hour or so before dark and then fish for about four hours then about 2 or so hours before light and fish for about 2 hours after daylight for cats and crappie!
I do enjoy just going out for the whole night but can be very boring waiting on the bites!

usually my wife and I would start just before dark, depending on how long we figured it would take to catch bait, and fish until midnight or so. It depends on your return trip and how many fish you catch. I liked to clean the fish as soon as I got home so if we caught a lot we would leave a little earlier.

I don't know, All I know is that my parents have taken me when I was younger. We went off of a bridge that was destroyed and re built so this part of the bridge was no longer used for driving. We would go after dark and stay till late at night. It was alot of fun. Now that I have children we don't go anymore. But it was so dark that you couldn't always tell what you had until it was on the bridge. Oh, and its in the Gulf of Mexico, So much fun!
