My advice is to go to the bookstore and browse the cookbooks for titles like "easy recipes" or something like that. You'll find a lot!
You can also get books from the library to try them out. Have fun!

I don't cook anything during the week that takes more than 45 minutes, I love Rachel ray, she has great recipes that all only take 30 mins or less and she has at least 6 cookbooks full of them the only problem is she calls for a lot of fresh ingredients so sometimes I leave out what I think isn't really necessary also she cuts and chops a lot of stuff so if you are not quick with a knife it may take more than half an hour. If you have seen the commercial on tv for the vidallia chop, that really helps cut down prep time. you can also try crock pot recipes, you jut put everything in the pot in the morning (or the night before and refrig overnight) and just let cook all day while your at work/school and dinner is ready when you get home. and last but certainly not least, if you have an outdoor grill they work great and cook quick you can grill steak or chicken or pork chops and do a quick and easy side, like rice or a noodle packet or salad.

This one is super easy - you don't even need to cook the sauce, just the pasta - and it's great in the summer with ripe tomatoes!
Linguine with Fresh Tomato Sauce
For tomato sauce:
2 cups seeded, and coarsely chopped tomato
1/2 cup extra virgin olive oil
1 cup firmly packed fresh basil leaves, minced
1 cup firmly packed fresh parsley leaves, minced
3 tablespoons freshly grated Parmesan
3 garlic cloves, or to taste, minced
2 teaspoons salt
1 pound linguine
Fresh parsley to garnish
Make tomato sauce:
In a bowl combine well all the sauce ingredients and let the sauce stand at room temperature, covered, for at least 1 hour.
In large pot, bring 5 quarts of salted water to a boil. Add linguine and stir to prevent sticking. Return water to boil and cook until pasta is firm but cooked, approximately 7 to 10 minutes, stirring occasionally. Drain pasta well. Serve with tomato sauce, and garnish with fresh parsley.

sometimes simple is best - I like to make recipes that cook in the oven, which gives me time to prepare other things
- for example, chicken is easy to cook and use in so many ways:
chicken breasts, bone in - coat with bbq sauce, bake in over for 40 minutes.
- or saute boneless chicken in a pan, until juices run clear, cool and slice - add to salads, or make a club wrap with the chicken, tomato, lettuce, mayo, cheddar cheese, bacon.
pork loin is tender like steak but cheaper - buy some steak spice (comes in many varieties), sprinkle on pork loin, bake in oven, covered, for 45 minutes..
