I've tried leafy salad with chopped potatoe, darily chunks, feta cheese, Olives.

But I'm running out of ideas. Any really cool tasty stuff to add to a salad to really spice it up?

I absoloutly love feta cheese too, any ideas what will go lovely with that in a salad?

I love kidney beans and chic peas in my salad as well as cold (cooked) green beans, cucumbers and sliced hard boiled egg! For a bit of crunch try sunflower seeds or sliced almonds.

Apple-Cheddar Tossed Salad

INGREDIENTS
10 cups torn mixed salad greens
1 cup chopped red apple
1 cup cubed Cheddar cheese
1 cup chopped walnuts, toasted
HONEY DRESSING:
2/3 cup honey
2 tablespoons cider vinegar
1 teaspoon celery seed
1 teaspoon ground mustard
1 teaspoon paprika
1 teaspoon lemon juice
1 teaspoon grated onion
1/4 teaspoon salt
1 cup vegetable oil

DIRECTIONS
In a large salad bowl, combine the greens, apple, cheese and walnuts. In a blender or food processor, combine the first eight dressing ingredients. While processing, gradually add oil in a steady stream. Serve with salad.

Romaine lettuce, Kalamata olives, Purple onion, Tomato, Feta cheese, a light vinagrette dressing. Toss together. Serve this with fresh warm pita bread and hummus. It is an amazing meal.

I love fresh spinich with extra virgin olive oil and balsemic vinigar, salted dried sunflower seeds, a hard boiled egg.

My favorite though is leafy greens, a hard boiled egg, sunflower seeds, salt and pepper and chicken browned in lemon juice(blackened) use lemon juice as dressing also.

Another yummy one! Not healthy but soooooo good!

3/4 c sugar
1/3 c catsup
2 ts worcestershire sauce
1/4 c onions; minced
1/4 c wesson oil
1/2 c vinegar

1 lb fresh spinach
1 lb bacon; fried & drained
6 hard-boiled eggs; shelled &
-chopped
16 oz canned bean sprouts; drained

Instructions

Heat dressing ingredients until sugar dissolves. Chill and serve.

well I don't know if you'd like it, but a really good salad is made out of tuna fish(from a can), some sweet corn and lettuce. you mix them up well with salt and a bit of the sunflower oil from the tuna can. for a better taste, add some lemon juice and other condiments that you like.

favorites: lettuce, cashews, mandarin orange slices with poppy seed dressing or raspberry vinegrette.

lettuce, strawberries, almond slivers, celery with raspberry vinegrette.

lettuce, musk melon chunks, proscuitto, with balsamic vinegrette

warm tomato and spinach... heat some olive oil in a fry pan, add chopped garlic and tomato, heat through a poor on top of a bowl of spinach. Top with sunflower seeds and parmesean cheese shavings.

Green Bean, Walnut, and Feta Salad

1 1/2 pounds green beans, cut in half
1 cup chopped walnuts, toasted
1 cup diced red onion
1 cup crumbled feta cheese

Dressing:

INGREDIENTS

1/2 cup extra-virgin olive oil
1/2 cup packed fresh mint leaves, chopped fine
1/4 cup white wine vinegar or tarragon vinegar
1 small garlic clove, minced
1/2 teaspoon salt
Freshly ground black pepper

1. Bring 2 quarts salted water to a boil in a saucepan over medium heat. Add the green beans and cook them until they are crisp-tender, about 4 minutes. Drain the beans and plunge them immediately into ice water to stop their cooking. Drain them again and pat them dry.

2. Transfer the beans to a shallow serving bowl. Sprinkle with the walnuts, onion, and feta. Make the dressing: Combine the oil, mint, vinegar, garlic, salt, and pepper in a lidded jar and shake to blend. Pour the dressing over the bean mixture, toss thoroughly, and serve.

Serves 6-8.

1 bag (5 oz.) baby spinach, coarsely chopped (about 4 cups)

1 bell pepper, thinly sliced
1 cup strawberries, halved

3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
Directions
In large bowl, toss lettuce, sunflower seed, peppers, strawberries and feta.
In small bowl, whisk together oil, vinegar and sugar; pour over salad and toss to coat.
Serve immediately.

Make salad dressing from scratch. You can get ideas from Food Network.com or Allrecipes.com. Once you make your own dressings, you'll never go back to the nasty bottled stuff!
