Texas Chocolate Sheet Cake:
2 cups flour
1/2 tsp. salt
2 cups sugar
3 tbsp. cocoa
1/2 cup water
1 stick butter
1/2 cup canola oil
2 eggs
1/2 cup buttermilk
1 tsp. baking soda
1 tsp. vanilla
Icing:
1 stick butter
6 tbsp. milk
4 tbsp. cocoa
1 tsp. vanilla
1 box powdered sugar
1 cup chopped nuts
Combine flour, salt, sugar, and cocoa in mixing bowl. Combine water, butter, and oil in saucepan and bring to a boil. Pour into mixing bowl with dry ingredients and add eggs, buttermilk, soda, and vanilla. Pour into a greased 15 x 10 inch jelly roll pan and bake at 350 degrees for approximately 30 minutes. While cake is baking melt butter, milk and cocoa for icing. Remove from heat and add vanilla, powdered sugar, and nuts. Mix well beating out any lumps. Pour over warm cake as soon as it is removed from oven and spread icing evenly.

Texas Chocolate Sheet Cake
Bring to a boil in a pan:
1 stick margarine
1/2 cup solid shortening (I use butter flavor Crisco)
4 tablespoons Hershey's cocoa (NOT European style--only use the good old USA style)
Set aside to cool.
Sift together in a large bowl
2 cups flour
2 cups sugar
1 teaspoon cinnamon
Pour chocolate mixture over the flour/sugar mixture
Add:
2 well-beaten eggs
1 teaspoon vanilla
1/2 cup buttermilk that has 1 teaspoon baking soda dissolved in it.
Mix well and pour into greased 9x 13 pan.
Bake in preheated oven at 350 degrees for 25 minutes. Do not overbake!
Ice the cake as soon as it comes out of the oven.
Icing:
Bring to a boil in a saucepan --
1 stick margarine
6 tablespoons milk
4 tablespoons Hershey's cocoa
Stir continuously until mixture thickens. Then remove from heat and add 1 teaspoon vanilla, the box of powdered sugar and 1 1/2 cups chopped pecans. You can omit the pecans, if you don't like nuts.
Pour hot icing over the cake and let it cool. This cake can be made ahead because it is actually better the next day!

Grease a 15X10X1-inch or jelly roll pan or a 13X9X2-inch baking pan; set aside. In a large bowl, combine flour, sugar, baking soda, and salt; set aside.
In a medium saucepan combine 1 cup butter, 1/3 cup cocoa, and 1 cup of water.
Bring mixture to a boil, stirring constantly. Remove from heat. With an electric hand-held mixer on medium speed, beat chocolate mixture into the dry mixture until thoroughly blended. Add eggs, buttermilk, and vanilla. Beat for 1 minute (batter will be thin). Pour batter into the prepared pan.
Bake in a 350° oven about 25 minutes for the 15X10-inch pan or 35 minutes for the 13X9-inch pan, or until a wooden pick or cake tester inserted in center comes out clean.
Pour warm chocolate frosting over the warm cake, spreading evenly. Place cake in pan on a wire rack; cool

Go to allrecipes. com and type "Texas Sheet Cake 2" in the recipe search box. This is the best one, and you'll be able to print it out & save it.
Just sprinkle 1/2 cup of chopped pecans over the frosting before it sets up. Yum!

2 tablespoons unsweetened cocoa powder
3 1/2 cups confectioners' sugar
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Grease and flour jelly roll pan or line with parchment paper.
In a large bowl, mix together flour, baking soda and white sugar. Set aside.
In a saucepan, heat 1/2 cup butter, shortening, coffee, and 1/4 cup cocoa until boiling. Stir frequently. Pour chocolate mixture over flour and sugar. Stir in buttermilk, eggs, baking soda and 1 teaspoon vanilla. Spread into jelly roll pan.

While cake bakes, prepare frosting. Combine 1/2 cup butter or margarine, milk and 2 tablespoons cocoa in a saucepan. Heat to boiling, stirring constantly. Beat in confectioners' sugar and vanilla until smooth. Spread warm frosting over cake as soon as it is taken from the oven. Cool.
