Im making baked chicken with a side of green beans with butter. also making some buttered biskets. i need one more side. . . any ideas?

twice baked potatoes

INGREDIENTS
4 large baking potatoes
4 tablespoons milk
salt to taste
2 tablespoons butter
1/4 cup shredded mild Cheddar cheese

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Clean and scrub baking potatoes. Pierce skin with a fork once or twice. Bake at 350 degrees F (175 degrees C) for approximately 1 hour or until the potatoes are soft and firm.
Let potatoes cool slightly. Cut baked potatoes in half and scoop out pulp within 1/4 inch of the shell edge. Mash the pulp with milk, salt and butter to taste. Stuff shells with mashed pulp mixture sprinkle tops with grated cheddar cheese. Place potatoes on a baking sheet and bake at 350 degrees F (175 degrees C) for 15 minutes or until cheese is melted and bubbly.

Chicken rice is good with the baked chicken.

all ingredients are really to taste.
take a bit of butter, toss in pan over medium high heat, add 1/2 finely chopped onion and saute for a bit until it's tender. add 1 cup of rice and some dried parsley and stir occasionally until fragrant and the rice is light brown. add about 2 cups of chicken broth ... i usually use a soup base that i make up a bit stronger than normal and stir. if it's not already boiling, bring up to a boil, stir it again, turn down to a simmer, cover it up and leave it alone for about 20 or so minutes. take the cover off, stir it again, taste to see if it's done. if not, cover it back up and let it cook a bit longer.

roasted potatoes and onions are good as well.

We like wild rice or good ole mashed potatoes mashed with cream cheese instead of butter. Baked sweet potatoes are yummy too.

Minty Potatoes
INGREDIENTS

* 5 (10 ounce) russet potatoes
* 1 tablespoon vegetable oil
* 1 large red onion, chopped
* 1/2 cup raisins, soaked in hot water and drained
* 3 green chile peppers, chopped
* 1/2 teaspoon asafoetida powder
* 2 teaspoons ginger garlic paste
* 1 teaspoon cumin seeds
* 2 teaspoons fennel seeds
* 2 teaspoons lemon juice, or to taste
* 1 teaspoon ground black pepper
* 1/2 bunch fresh mint leaves
* 1/4 cup fresh cilantro, chopped

DIRECTIONS

1. Place the potatoes in a large pot and fill with enough water to cover. Bring to a boil and cook until the potatoes are tender, 20 to 25 minutes. Drain, cool, peel and cube. Set aside.
2. Heat oil in a large skillet over medium heat. Add the onion, raisins and chile peppers and season with asafoetida powder, ginger garlic paste, cumin seeds and fennel seeds. Cook and stir until onions are tender and golden brown.
3. Add the potatoes to the skillet along with whole mint leaves. Cook and stir until potatoes are glazed with the spices. Stir in lemon juice and season with salt and pepper. Garnish with cilantro leaves.

some pasta/potato- mashed creamy potato is good or alfredo passta, simple vegies like peas and carrots and dont forget teh stuffing! that's the best bit of roasted/baked chicken
