Matter and energy can interchange.
That's how the sun and stars, nuclear bombs and nuclear reactors work. They all convert matter into energy.

That bottom question, "Why something? why not nothing", used to keep me up nights, until I had to let go of it.
There are basically no divisions. Energy forms matter, as directed by mind...those three, Energy, Matter, Mind, are the same...everything is consciousness, every physical object "contains" consciousness. "True" physical reality is our projection, or dream, based upon our becoming afraid that we were no longer one, and had to hide from God.
Energy and matter do interchange (read the Seth Books, by Jane Roberts...excellent in depth material on how we form physical reality). The Seth Material, Seth Speaks, The Nature of Personal Reality...

Physical reality is one of the created reality.
Reality is of host and structural nature, the created reality is variable to a host or into a guest or both at the same time, at different scales or frames of references.
Interchangeability is the characteristic of created reality, but the ultimate and absolute reality, the All Mighty Allah, is the one and unique, never got created, self sustained with no start and no end, the host of all rest of created realities, who holds the sovereignty of everything. Never gets changed, progressed, depreciated , who is always constant and permanent.
All created reality is just a negligible diversity with reference to ultimate reality of All Mighty Allah (swt), the ultimate Creator.

The Big Bang Singularity (not to be confused with black hole singularities) contained *ALL* the matter & energy in the Universe in a very high mass / close to zero volume point. Thus it was almost infinitely dense - i.e. *the antithesis of 'nothing'*, it was everything (*started with everything*).

Answer to second question: yes, and do constantly.
Some forms of energy disappear completely or are "spontaneously" created as well.
