Ingredients:
1 cup brown sugar
1 1/4 cup water
1 cup raisins
2 ounces citron,cut fine
1/3 cup shortening
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon salt
2 cups flour
5 teaspoons baking power
Directions:
Boil sugar, water, fruit, shortening, salt and spices together in saucepan 3 minutes; when cool, add flour and baking powder which have been sifted together; mix well. Bake in loaf pan in moderate oven (350) about 45 minutes.

2 cups hot water
1/2 pkg raisins

2 tablespoons shortening (butter or Crisco)
Combine the above ingredients and boil for 5 minutes. Let mixture cool, then add:
3 cups sifted flour
1 teaspoon baking powder
1 teaspoon baking soda
Preheat oven to 350°F. Turn batter out into a 9" tube or Bundt pan or an 8" square cake pan that has been greased and floured.
Bake at 350°F for 1 hour. Allow to cool before frosting with white, lemon or vanilla frosting or use White Frosting

a simple yellow cake that is easy to make and very tasty.
1 1/2 cups unbleached all purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt

3 cups flour
2 cups sugar
1/3 cup Baking Cocoa
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla extract
2 tablespoons white vinegar
3/4 cup vegetable oil
2 cups cold water
Powdered sugar
Directions:
PREHEAT oven to 350° F.
COMBINE flour, sugar, cocoa, baking soda and salt in ungreased 13 x 9-inch baking pan. Make 3 holes in mixture. Into the first hole, pour the vanilla extract, into the second hole, the vinegar and into the third hole, the vegetable oil. Pour cold water over all. Mix with fork or wire whisk until well blended; do not overbeat. Mixture may contain some small lumps.
BAKE for 35 to 40 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Dust with powdered sugar.

* White or lemon cake works well with diet lemon-lime soda. I read that diet coke goes well with chocolate cake mix, but haven't tried it yet.
* A carrot cake mix can be made with 1 C diet soda, one 8 oz. can of crushed pineapple and juice, 1/2 C shredded carrots, 1/2 C raisins, and 1/2 C nuts.

Mix baking soda in 2 teaspoons hot water set to side. Mix brown sugar, 2 cups of hot water and shortening in a medium size sauce pan. Add raisins, salt, cinnamon and cloves. mix and boil for 5 minutes after first bubbles. Remove from stove. Let cool completely (very important). After cooling, add flour and baking soda. Mix well. Pour into a greased tube pan.
Bake 350 - 375 degrees for 1 hour
This recipe developed around 1918 during World War 1. What a treat for someone who is allergic to dairy products or eggs. And one of the best parts of this dark, heavy cake is that you mix it all in one pan- no fuss and hardly anything to wash.

Angel Food and Chiffon cakes are baked without fat and use only egg whites in the recipe. if youre worried about wasting egg yolks you can buy egg whites in cartons at the super market. when beating egg whites you have to make absolutely sure not to get a drop of oil or margarine in them or they wont beat up. angel food cakes are delicious with fresh fruit and whipped cream :)
Angel Food Cake recipe
1 1/2 cups egg whites (11 to 13 whites)
1 1/8 cups sifted cake flour
1 3/4 cups granulated sugar, divided
1/2 teaspoon salt
1 1/2 teaspoons cream of tartar
1 teaspoon vanilla extract
1 scant teaspoon almond extract
Let egg whites stand until room temperature. Sift flour once before measuring. Sift flour and 3/4 cup sugar together 5 times.
Put egg whites and salt into large bowl of mixer. Beat until foamy. Add cream of tartar and continue beating until whites are stiff and stand in point, about 2 1/2 to 3 minutes. Do not over-beat until dry. Sprinkle in gradually 1 cup sugar, while beating on medium speed. Beat only until sugar is blended, about 1 1/2 minutes. Turn to low speed and add vanilla and almond extracts. Sprinkle in sifted flour mixture evenly and quickly. Beat only enough to blend, about 1 1/2 minutes, scraping bowl to blend in quickly. Pour into 1-inch tube pan. Cut through batter with knife or spatula, going around in circular motion 3 times to release large air bubbles. Bake in preheated 375 degree F oven for 30 to 35 minutes until golden brown. Turn oven off after 30 minutes. Leave cake in oven for 5 more minutes before removing. This cake can be frozen.
Chocolate Angel Food Cake recipe
1/4 cup plus 3 tablespoons unsweetened cocoa powder
1 1/2 cups (about 12) large egg whites, at room temperature
1/2 teaspoon salt
1 teaspoon cream of tartar
1 1/2 cups superfine granulated sugar
1 teaspoon vanilla extract
1 1/2 cups sifted cake flour
2 ounces semisweet chocolate, grated
In a small bowl, dissolve 1/4 cup plus 1 tablespoon of the cocoa powder in 1/4 cup boiling water.
In a very large bowl, beat the egg whites with salt and cream of tartar until they hold soft peaks. Beat in 3/4 cup sugar, a little at a time, and beat whites until they hold stiff peaks. Fold in cocoa mixture and vanilla extract.
Into a bowl, sift together 4 times flour, remaining sugar and cocoa. Sift the mixture over egg white mixture in 2 batches, just folding it in each time. Fold in grated chocolate. Spoon batter into a 10-inch angel food cake pan and, with a knife, cut through several times to eliminate air pockets.
Bake in preheated 350 degree F oven for 40 minutes.
Invert in pan on rack and cool completely. Run a thin knife around cake and turn out on cake plate.
