As you cut them, run them under water after a few cuts. That helped me. Also cut off that bottom root structure first and run the cut under running water. Discard the cut off root structure (bottom) piece as it has the strongest onion stink.

Make sure the largest surface area of the cut part of the onion is always faced down

I have found that by keeping the onions in the refrigerator it makes them easy to cut and they don't grow so fast.

Only 'room' temperature onions cause this, I have noticed. Place in refrigerator for a couple of hrs. before chopping.

after cutting them in half put them in a bowl of ice water to soak. then cut them the rest of the way.
