The price of sin has always been death. Therefore, everyone must suffer death. Event Enoch and Elijah will come back to earth and die someday. The shedding of innocent blood has always been the method for the redemption of the soul. Before Jesus, "Old Testament" as you say, the killing of and innocent beast, such as a lamb or goat, was required for redemption.

Saints are a Christian concept, not a Jewish one. So there are no Saints until the New Testament.

They were faithful to God and looked forward to the cross. They were in Abraham's bosom, a place where their spirits went until Jesus died on the cross and went there to set them free and take them to Heaven. Read the story about the rich man who went to Hades and Lazarus who went to the other side, to Abraham's bosom. All Salvation involved the cooperation of the Saint's Faith, a Love-filled Fidelity, grown out of Belief in the Torah (Guiding Principle) of GOD. This all was undergirded with the REDEEMING SACRIFICE. On account of their innocense, sacrificed animals could bear sins in place of those offering them up to GOD, but in lieu of the then upcoming SELF-Sacrifice of the LAMB OF GOD, JESUS CHRIST. In the PROPHETIC SPIRIT was the Priesthood of the Old Covenant operated. Those clean animals, all such as quietly accepted death, were honored with participation in the death of JESUS, as vicarious of the one SACRIFICE for all. Now the LAMB of GOD HIMSELF has come, and we can go back in time and space in the Eucharistic Liturgy, to behold HIM in our time and space. We still must actively apply our wills to cooperation in Faith with the REDEEMER.

It's that simple.
