i like to slice them up and put them in a casserole dish with ooohhh maybe a table spoon of butter and a can of cream of mushroom soup the sprinkle heavily with Parmesan cheese and bake in oven at 350 until squash is tender. maybe about 20 to 30 min

Baked Zucchini with Tomatoes

Ingredients:
3 zucchini, cut into 1/4 inch slices
2 tomatoes, cut into 1/4 inch slices
1 onion, peeled and diced
1 green bell pepper, seeded and diced
1/4 cup olive oil
1/2 teaspoon salt
1/8 teaspoon ground black pepper

Directions:

Preheat oven to 350F. Generously butter an 11 x 7 x 2 inch baking dish. Arrange zucchini and tomato slices in prepared baking dish in alternating rows, slightly overlapping. Sprinkle with onion and green bell pepper. Drizzle with olive oil. Season with salt and pepper. Bake uncovered for 25 minutes or until vegetables are tender crisp. Serve hot or at room temperature.

Place yellow & green zucchini on a cookie sheet add lots of tomatoes and onions. Toss with EVOO Bake 450 about 20 mins. Great side dish

Squash hash browns
grate a 1/2 cup of squash (zucchini or yellow or a combination)
for each person being served. Fry small mounts in olive oil until golden brown. Turn once only. Season with salt and pepper before serving.

Slice the zucchini into rounds. Dip in beaten egg, then flour (or bread crumbs). Saute in olive oil until golden brown, about 8 -10 minutes. Serve with lemon.

Slice your squash into four long slices. Place in a ziplock bag with some balsamic vinegar and sea salt. Let marinate for up to one hour. Place on a hot grill for two minutes on each side. Bon appetit!

While you're at it, try doing the same to asparagus, eggplant, portobello mushrooms and green onions. Yum yum!

They make a nice summer salad;
Slice on the diagonal, cover with boiling water to blanch for about 3 minutes, drain, add cold water to stop cooking, drain again. Season with lemon pepper or salt and pepper and some lemon juice and zest, some tarragon, and toss with a little olive oil and vinegar. Enjoy their natural flavour and nutty sweetness!

Olive oil, italian seasoning, pepper and salt. Grill for about 5 to 7 min. with skin side down for the majority of the time

Chop them up into large chunks.
Place in a roasting pan.
Add salt and honey to taste and mix well.
Roast at 450 for 30 minutes.
