im bored tonite have cake icing but no cake mix ust wondering if you can make your own batter from home with some simple ingredients :)

Chocolate Cake

Batter:
2 cups (200 grams) sifted cake flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (50 grams) unsifted cocoa powder
1/2 cup lukewarm water
1/2 cup buttermilk, room temperature
1/2 cup water
2 teaspoons vanilla
2 large eggs, room temperature
4 ounces (1 stick) unsalted butter, room temperature
1 cup (200 grams) granulated sugar
1 cup (200 grams) light brown sugar, packed

Adjust rack in lower third of oven. Preheat oven to 350 degrees. Grease and flour two 8-inch round cake pans, and insert parchment paper or waxed paper to line the bottoms. Sift the flour, baking soda, and salt onto a sheet of waxed paper; set aside. Place the cocoa in a 1-quart mixing bowl. Add the 1/2 cup lukewarm water, and whisk to combine; set aside to cool. Pour the buttermilk, the 1/2 cup water, and the vanilla into a liquid cup measure. Crack the eggs into a small bowl, and whisk together to combine the yolks and whites.
Place the butter in the bowl of a heavy-duty mixer, preferably fitted with a flat beater. Cream the butter on medium speed until the butter is smooth and lighter in color, about 30 to 45 seconds. Reduce the speed to low, add the sugars in a steady stream. When all the sugar is added, stop the machine, and scrape the mixture clinging to the side of the bowl into the center. The mixture will appear sandy. Increase the speed to medium again, and cream until the mixture is light in color, is fluffy in texture, and appears as one mass, about 5 to 7 minutes. With the mixer still on medium speed, pour the eggs slowly at first. Continue to cream, scraping the sides of the bowl at least once, until the mixture appears fluffy and velvety. Stop the machine and spoon in the cooled cocoa mixture, resume at medium speed and mix just until incorporated.

Using a rubber spatula, stir in one-fourth of the flour mixture. Then one-third of the buttermilk mixture, stirring to blend together. Repeat this procedure, alternating dry and liquid. With each addition, scrape the sides of the bowl, and continue mixing until smooth, never adding liquid if any flour is visible.

Pour the batter into the pans and spread it level. Bake for 25 minutes, or until the baked surface springs back slightly when touched lightly in the center and the sides contract from the pan.

Place the cake pans on a rack to cool for 5 to 10 minutes. With mitts, tilt and rotate pans gently tapping them on the counter to see if the cake releases from sides.

YELLOW CAKE MIX (HOMEMADE)

2 c. flour
1 tbsp. baking powder
1 tsp. salt
1/2 c. butter, softened
1 1/4 c. sugar
2 eggs
3/4 c. fluid milk
1 tsp. vanilla

Beat together butter and sugar until light and fluffy.

Sift together the flour, baking powder and salt. Set aside.

To mix the cake add the flour mixture slowly to butter mixture in a large bowl, beating well (300 times).

Add half of the flour mixture, then half of the milk and the vanilla. Mix (50 times). Add the eggs, beating well after each addition.

Add the remaining flour mixture, then the rest of the milk. Mix until smooth (200 times).

Fill a greased, floured baking pan or 2 layer pans no than half full.

Bake at 375 degrees (moderate oven) 25 to 35 minutes until cake springs back when lightly touched near center.


CONFECTIONERS SUGAR ICING:

1/3 c. butter
1/4 c. fluid milk
1/4 tsp. salt
1 tsp vanilla
About 2 1/2 c. confectioners sugar

Mix all ingredients except sugar. Mix in 1 cup of the sugar. Beat well. Mix in rest of sugar as needed to make icing that will spread well and stay on cake. Put on cooled cake. Makes about 1 1/2 cups icing.

Change to: 10 inch tube cake US Metric
1/2 cup shortening (stick of butter or butter up [half butter, half margarine] are best, but you can use Crisco shortening too)
1 cup sugar
2 eggs
2 cups flour
1 cup milk
3 teaspoons baking powder
1 tablespoon vanilla
1 cup nuts, ground (optional)

Cream shortening and sugar, add eggs and beat. Add flour, milk and baking powder.
Add vanilla and nuts.
Place in greased and floured pan.
Bake at 350 degrees until top of cake springs back when touched (about 30 minutes).

Yes. I do it all the time. You can use all purpose flour. But your cakes will come out so much better if you use proper cake flour, such as Swan's Down or Softasilk. The reason for this is the low gluten content will give you a texture like you're used to from the cake mixes. All purpose flour will be a bit bread-like. Although it's fine for unfrosted cakes such as pound and coffee cakes.

You sure can, it's what is sometimes referred to as making a cake from "scratch".

First, here's some basic hints for baking from scratch.

Before you begin baking these cakes from scratch, be sure to pay close attention to a few tips for success:

1. Pay close attention to the recipe. When baking the exact measurements ARE important.

2. When a recipe says to alternate adding in flour and milk - do it. This gives lightness and moistness to your cake. Otherwise, you will have a brick (heavy) cake.

3. Try separating your eggs. Add in the beaten whites as directed for the eggs. Then, beat the yolks and add to the milk. Add the milk/yolks in by alternating with the flour.

4. Try sifting the flour before assembling your batter. This also helps with lightness. If you only have self-rising flour, the omit the salt, baking powder and/or baking soda from the recipe - they are already included in self-rising flour.

5. Half the shortening can be substituted with either margarine, butter or applesauce. This preserves moistness and richness but removes some of the weight and “bad” fats.

Bake in preheated 350° oven for 30 to 35 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Let cool in pans on a rack for 15 minutes; remove and place layers directly on racks to cool completely


Note: This cake calls for cake flour, if you don't have any just measure out plain flour and then remove two level tablespoons from each cup.
