I like to roast broccoli in the oven and it comes out crispy. Preheat your oven to 425 degrees. Place your cut broccoli on baking sheets. Drizzle olive oil over the broccoli, sprinkle with salt, pepper, red pepper flakes, and chopped garlic over the broccoli. Stir to combine. Place in your oven and bake for 20-25 minutes depending on the size of the florets. The broccoli comes out crispy and nothing like boiled or steamed broccoli. It's great.

SICILIAN BROCCOLI
1-2 pounds broccoli
6-8 cloves garlic, sliced
1/4 teaspoon hot red pepper flakes
1/2 teaspoon kosher salt (or to taste)
1/3 cup extra virgin olive oil or enough to coat
Slice broccoli into long portions, each with a stem and a "tree top". Slice directly through the "trunk," including a small section with each piece.
Steam broccoli in a steamer or by placing in a large covered skillet with a small amount of water.
Cook broccoli only until it attains a bright green color, then remove from heat. Broccoli will still be firm and may appear not to be completely cooked. This is as it should be, as the broccoli with continue to cook when removed from heat.
Pour on the olive oil, very thinly sliced garlic, hot pepper and salt to taste.
Place all into a refrigerator container and marinate overnight. Serve cold or at room temperature.

Broccoli Raisin Salad
1 cup mayonnaise
1/2 cup sugar
1 tbsp. vinegar
2 bunches fresh broccoli, cut into bite-size florets
1/2 lb. bacon, fried and crumbled
1/2 sm. onion, diced
7 oz. raisins
Directions:
Blend mayonnaise, sugar and vinegar. Mix together broccoli, bacon pieces, onion and raisins. Fold in mayonnaise mixture. Chill for a couple of hours. This is best eaten the same day.

~~Broccoli/Cauliflower Salad!~~
1 head broccoli
1 head cauliflower
1 med. onion
1/2 c. bacon bits
2 c. prepared Hidden Valley Ranch dressing
1/4 c. Parmesan cheese, grated
Chop broccoli and cauliflower into bite-size florets. Mince onion and add to broccoli mixture. Stir in bacon bits. Stir together salad dressing and Parmesan cheese and mix into salad. Chill and serve.
Makes 12 servings.

Boil the brocolli ... a little salt to taste. When you take it out and strain it, put it in a large bowl and add lemon juice, just enough to coat the broccoli. Let it sit for 10 minutes or so to marinate the flavors. It's a great side dish!
You can serve hot or cold. I love to crumble feta cheese over top ... delish!

Steam the broccolli and put cheddar cheese and bacon bits on it.
Or a baked potato with cheddar cheese and broccolli.
2 cans of cream of mushroom soup with about 4 cups of broccolli and 2 cups of french fried onions or your own fried onions(crunchy). Mix 1 cup of the onions with the broccolli an dsoup and then sprinkle the remaining onions on top. Bake in the oven for like 35 mins at like 350.

Broccolli, velvetta cheese and crushed ritz crackers baked in the oven. Yum. mix the cheese and broccoli and put the crackers over the top.
