Do a chicken, veal or pork scallopini, just pound out peices until thin, season with salt and pepper, lightly dredge in flour and brown in olive oil and butter, about 1 tbsp each. When meat is cooked, remove from pan, deglaze with your wine and reduce until thickened, add 1 tbsp fresh lemon juice, additional salt and pepper and put the meat back in, turn to coat and serve. Accompany with herbed angel hair pasta or rice, broccoli would be a good veg.

I'd mix it with some sour cream and dijon mustard for a great sauce! Also, when I'm cheating, I mix it with cream of mushroom soup and some dijon mustard and pour it over meatballs for a meatball stroganoff. You can also add it to the brine from artichoke hearts, along with some butter, parsley, and simmer until thickened. Add some asiago or feta cheese to add richness.
