I am a former chef and worked in Montreal years ago, as all have said they are cheese curds, the uncoloured cheddar cheese curds, they have no bacterial cutlutre to give them a strong flavour, and as one respondant said about mozzerella, it is used by chains like A&W, Burger King and some others because it melts fast.

But in true Quebecoise poutine, you want the curds to melt but stay a bit firm, the combination of the dish is the soft fried potatos, the melting chese curds and the gravy all in one bowl, now in Montreal you have several places that specialize in Poutine.

I had one the corner were I lived just off of Sherbrooke, and yes even there you can get a variety of added topping, from Smoked meat, Sausages, ground beef and fried onions.

Yor choices are overwhelming, I like late at night to grab at the Lafleur, a couple of hot dogs Michigan style and a small poutine, then stop by the local Couche Tard, and get a large Molson Ex and go home, then I sleep a whole lot better.

You can use any kind of cheese for poutine. I live in Toronto, so I don't know what cheese is used for "traditional" poutine, but I've seen mozzerella used a lot whenever I order it in various restaurants.

If you ever get a chance to go to Ottawa, make it part of your trip to head to this place called "The Elgin." It's in downtown and about a 15-20 minute walk from Parliament. They have THE best poutine in southern Ontario. There are two versions: Montreal smoked meat (which, obviously, uses Montreal smoked meat), and, my favourite, the Philly cheese steak. That has stripped beef steaks, mushrooms, and sauteed onions.

Damn, I think I'll make the four-hour drive there now for some...lol

depends on where you're eating. McDonalds has poutine, and so do upscale restaurants.
You can get anything from cheap deli cheese to delicious gourmet cheeses. Poutine also has different toppings like duck, pork beef.... people have gone poutine crazy. It used to be meatless with the gravy on top and the cheese. Now it's a huge meal like Jay Leno would eat.

The most common type is cream cheese (regular not light as a rule). However, there are recipes that call for marscapone (an Italian soft spreadable type cheese) or ricotta. Google cheesecake recipes and you will find hundreds of variations!

Traditionally, I think it's supposed to be cheese curds but I happen to prefer the combination of cheese curds and shredded cheese - makes it gooier.

fromage en grain or crottes de fromage is what's used - I live in Texas now and man I would do anything for a poutine right now!!!

Cheese curds. It looks gross, but I've never had it, so I can't have too strong of an opinion.
