There are many pickle recipes that call for little or no sugar and may be used without modification in a low-sugar diet. Sugar in pickles is used to add flavor and to balance the tartness of the vinegar. If sugar is eliminated from pickle recipes, the pickles or relish may taste quite tart.

If you are canning from a home made mix, the sugar is just for a particular type pickle. If you are making Bread and Butter pickles, you would use sugar and in sweet pickles you actually use a little more sugar.
You'd be surprised at how much sugar is used.Dill pickles or Polish don't call for sugar. The vinegar is used to preserve as is the salts used. The hot canning kills bacteria before the jar is sealed.
The easiest way is to get a bag of pickle mix for whatever kind you want and follow the direction. There is usually enough for 12 quarts of pickles and that is alot.

Sugar make the pickles sweet, that is it's only role, like bread and butter pickles, sweet gherkins, etc.. It's sweetness tames the sharp bite of the vinegar, without the sugar it would be super sour.

For sweet pickles as opposed to hot or dill or sour. In other words, there are lots of ways to "pickle" something. Different herbs and vinegars and spices create different results. Hot pickles, sweet ones, sour ones....love 'em all!
