Does anyone have a recipe for Ratatouille?

RATATOUILLE #1

1/2 c. oil
5 garlic cloves, finely chopped
1 1/2 c. onion, chopped
1 1/2 c. green or red peppers, coarsely chopped
1 1/2 c. diced eggplant, skin on
1 1/2 c. zucchini, sliced and quartered
1 tsp. fresh black pepper
1 tsp. salt
2 to 3 tbsp. chopped fresh basil
Cayenne pepper or Tabasco
1 1/2 c. chopped ripe tomatoes (may use Italian plum)

In heavy skillet, saute in oil the garlic, add onions and blend. Add chopped peppers, eggplant (does not need to be soaked or salted before) and zucchini. Blend all together well, mixing with a wooden spatula and shaking the pan. Then add black pepper, salt and basil. Add cayenne or Tabasco if desired. Cook 10 minutes over brisk heat, stirring constantly. Then add chopped tomatoes. Let the ratatouille cook down to the consistency you like.

In olive oil fry onions and garlic slowly until soft. Add chopped red and green capsicum (bell pepper), eggplant, zucchini and tomato. Put a lid on so some moisture is generated. If necessary add a little more oil. Cook until everything is soft. Season with salt, pepper and Italian herbs.

egg plant
garlic
onion
zucchini
yellow squash
tomato cubed
thyme * salt * pepper
tomato paste
saute all ingredients in olive oil except for the tomato chunks and tomato paste, once they become soft and translucent add the paste & the tomato - reseason if necesary and let it simmerall together for a couple minutes then enjoy
*** I have oven roasted them as well
*** I love to serve this with rosemary roasted chicken and also it's great with a nice grilled tuna steak

1 eggplant, diced into 1-inch chunks
1 green bell pepper, cut into 1-inch squares
1 red bell pepper, cut into 1-inch squares
3 zucchini, sliced 1/2-inch thick
4 tomatoes, cut in 1-inch chunks
1 large onion, chopped
2 cloves garlic, minced
1/4 cup dry white wine
1/2 lemon
1/4 cup olive oil
1 tsp. dried thyme or 1 Tbsp. fresh, chopped
1/4 cup fresh basil, chopped or 1 tsp. dried
2 bay leaves
1 tsp. salt
1 tsp. black pepper





Heat olive oil in a large pot. Saute onions until they are translucent. Add garlic, thyme, basil, salt, pepper, and bay leaves. Cook about 2 minutes. Add tomatoes and wine. Simmer uncovered for 30 minutes, stirring occasionally.
Add eggplant, zucchini, red and green peppers. Simmer covered for about 15 minutes or until the vegetables are tender, stirring occasionally but do not break up the veggies.
Chill overnight.
Sprinkle with lemon juice and serve hot over white rice.
