Yes, cut them all up and saute' them in a pan with a little butter. Tastes great!

I had some leftover squash in the fridge last week. Yellow, green and a greenish-white.
I chopped them all up with some onions and shallots, put them in a big Pyrex pan with some olive oil and 1/4 cup of honey and roasted them at 400 for 30 minutes.
Not only was it a beautiful dish, due to the colors, but it tasted great!

This time of year is squash season, summer squash. I mix scalloped, yellow crooked neck and zucchini. You get a colorful dish and it tastes great. I love the taste so I steam them together and serve with a little salt and pepper. They make a great appetizer platter raw, with some bleu cheese dressing.

Heres something I do often. Chop up some good bacon, render it down good and crispy, remove from pan, leave bacon grease in pan, if theres alot you can drain some of it, toss in some butter, chopped shallots, chopped garlic, cook until onions are translucent and do not allow garlic to burn, then add your medly of squash cook on medium heat for a few mins, toss in your cooked bacon peices, then add a can small can of tomatoe sauce and a small can of chopped tomatoes drained well, salt and pepper to taste. then simmer for about 20 mins. or until squash is done to your liking. This is really good stuff !

yep, better yet mix w/ zucchini or eggplant and roast w/ olive oil, salt and pepper, and a bit of red pepper flake. is delicious
