CHEESE OMELETTE

5 slices thick bacon
4 potatoes, boiled
1 onion, chopped
4 eggs
4 tbsp. milk
2 tomatoes, sliced
2 oz. Swiss cheese, grated
1 tbsp. parsley
Salt & pepper to taste (doesn't need much)

Chop onion and cut potatoes into small cubes. Brown bacon, potatoes and onion in skillet. Beat eggs with milk, salt and pepper; pour over ingredients in the skillet. Make sure eggs are evenly distributed.
Put sliced tomatoes on top and sprinkle with cheese. Cook until omelette is creamy on top about 10 minutes. Sprinkle with parsley. Serves 4.

Omelette.
1 Egg.
1T Milk.
1t butter.
Grated Cheese.
(I)
Whisk together the egg and milk. Melt butter in a small fry pan and add the egg mixture, swirling to cover the pan.
(II)
When the omelette is almost set sprinkle on the filling.
Fold in half and cook for a further 1 minute.
Slide out onto plate.

Depends on what type of omelette. For example: Denver omelette: mix 3 eggs with whisk,mixer or blender. Saute diced ham,diced onion and diced green pepper in a separate skillet until done. Use a non-stick skillet with a little oil heated, pour eggs in lifting edges with spatula and letting raw egg run under until cooked(will be little raw on top)Place skillet under broiler or in oven 400 degrees with cooked veg. on top sprinkled with cheddar cheese. Wait until cheese is throughly melted (about 2 min.) This is the tricky part fold omelet in half and slide out of skillet onto plate. Any other omelette is similar with different ingredients inside and any cheese you choose.

Small:

1 egg,,
Crack egg into bowl add a little milk, then wisk; then pour into frying pan. Cook untill it starts to bubble then flip over, add cheese or whatever you like in it; then fold. Let cook for about 1 too 2 mins then eat.

I love making Cheese/Mushroom/Bacon omelettes, yumm... :D
