I suggest you start with Bart Ehrman's "Misquoting Jesus." You will understand the scope of the problem you are embarking on.
There are 400,000 extant variant passages in just the New Testament. The translators really do not know which are original passages and which are not. There are more variations than there are passages. Translators, to some extent, guess. They are educated guesses, but no one really has any clue what the New Testament looked like originally. We do know that quotes of the New Testament in the apostolic fathers do not read like the same passages we have and they knew the apostles.
Start with Ehrman's book and then get the study book for Greek.

You would be better off studying the original languages that the bible was written in, Hebrew and Aramaic. Greek was just a translation or the originals.
