Cheesy Potatoes I
INGREDIENTS
* 8 medium baking potatoes, peeled and sliced
* 1 onion, chopped
* 1 (1 pound) loaf processed cheese food, sliced
* 1/2 cup butter, sliced
* salt and pepper to taste
* 1 1/2 cups milk
DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C).
2. Place 1/2 the potatoes in a medium baking dish. Layer with 1/2 of the onion, 1/2 of the processed cheese, and 1/2 of the butter. Season with salt and pepper. Repeat layers, reserving 5 or 6 slices of the processed cheese. Pour in milk to approximately 1 inch depth.
3. Bake 40 minutes in the preheated oven, stirring twice. Top with remaining cheese food, and continue baking 30 minutes, or until potatoes are tender.

A popular side for that is cole slaw. Boiled or sliced and grilled potatoes go good with bbq pork ribs, and so does corn on the cob. Have a gravy boat with melted butter on the side (to put on the potatoes and/or corn).

Baked beans simmered with some good bbq sauce, brown sugar and bacon bits. A blue cheese and bacon potatoe salad, fresh corn on the cob, cole slaw(look for a KFC recipe). garlic bread cooked on a grille, vegtable kaboobs use whatever you like here, brushed with olive oil and butter, corn bread with chedder cheese and chopped jalapenos mixed into the batter, grilled hot links cut up and simmered in bbq. sauce make a great appetizer. the possiblities are endless.

Here are a few recipes that I use with bbq.
THREE CHEESE BAKED MACARONI
3 c. elbow macaroni (cooked and drained)
1 can Cheddar cheese soup
1 c. milk
1/4 tsp. salt (optional)
1/4 tsp. pepper
1/2 c. shredded Swiss
1/2 c. shredded Cheddar
1/2 c. grated Parmesan
1 can French fried onions
Preheat oven to 350 degrees.
In 1 1/2 quart casserole, mix hot macaroni, soup, milk, seasonings and 1/4 cup of each Swiss, Cheddar and Parmesan. Add 1/2 can fried onions. Bake uncovered at 350 degrees for 25 minutes or until heated through.
Top with remaining cheese and onions. Bake uncovered 5-8 minutes until cheeses are golden brown. Makes 4-6 hearty servings.
VELVEETA POTATO BAKE
5-6 large all purpose potatoes
16 oz. package Velveeta cheese
2 small yellow onions
6 strips of bacon
2 tablespoons oil (any kind)
Adobo seasoning (found in ethnic aisle of market) (optional)
paprika
oregano
salt and pepper
3 hot sausage links (if desired)
Wash and cut the potatoes into bite-sized pieces. Pour the oil into a 13x9 casserole dish, and then put the potatoes in.
Chop the onions into small pieces and mix in. Cut the bacon into small pieces and mix in. Sprinkle the seasonings on top (to your taste).
Slice three quarters of the cheese and layer on top, covering the whole pan. You can use more or less cheese according to your preference.
Bake in the oven at 375°F for about 1 1/2 hours. (If you use the sausage, remove from the casings and put small chunks throughout the mixture)
3 Bean salad
1 (16-ounce) can dark red kidney beans, drained/rinsed
1 (14.5-ounce) can cut green beans, drained/rinsed
1 (14.5-ounce) can cut golden wax beans, drained/rinsed
1 cup sliced fresh mushrooms
1/2 cup chopped red bell pepper
2 tablespoons minced red onion
1/2 cup vegetable oil
3 tablespoons white wine vinegar
1 tablespoon Dijon mustard
2 tablespoons Greek seasoning
In a medium bowl, combine first 6 ingredients.
In a small bowl, whisk together oil, vinegar, mustard, and Greek seasoning. Pour over bean mixture; cover and chill 4 hours, stirring occasionally.
TEXAS COUNTRY POTATO SALAD
4 c. cubed cooked potatoes
1 c. chopped celery
3 chopped hard cooked eggs
½ cup. Chopped red onion
¼ cup. dill pickle relish
2 tbsp. chopped parsley
2 tbsp. chopped pimento
Dressing:
1 qt. Miracle Whip
1/2 c. sugar
1/2 c. vinegar
3-4 tsp. prepared mustard
1 tsp. salt
1 c. sour cream (1/2 pt.)
Combine potatoes with the 6 other ingredients mix lightly. Combine dressing ingredients stir well. Pour over the potatoes and Chill 1 hour.
BAKED BEANS
4 (16-ounce) cans baked beans
1 (20-ounce) can crushed pineapple, drained
1 cup molasses
1 cup BBQ sauce
2 tablespoon yellow or brown mustard
5 slices cooked bacon, crumbled
1 (6-ounce) can french-fried onions, crushed
Salt and freshly ground black pepper
Preheat oven to 350 degrees F.

Buttermilk Cornbread
INGREDIENTS
1/4 pound butter
2/3 cup white sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt
DIRECTIONS
Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
Baked Beans
1 (29 ounce) can baked beans with pork
1/2 cup packed brown sugar
1/2 cup ketchup
1 tablespoon Worcestershire sauce
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a casserole dish, combine beans, brown sugar, ketchup, and Worcestershire sauce.
Bake, covered, for 45 minutes or until bubbly.
Buttermilk Coleslaw
INGREDIENTS
2 cups mayonnaise
1 cup buttermilk
3 tablespoons white sugar
1 teaspoon celery seed
1/2 teaspoon ground black pepper
2 (16 ounce) packages shredded coleslaw mix
DIRECTIONS
In a large bowl, stir together the mayonnaise, buttermilk, sugar, celery seed and black pepper. Fold in the coleslaw mix, and refrigerate until serving. This tastes best if it is refrigerated for a few hours before serving.
OR
Southern Potato Salad
INGREDIENTS
4 potatoes
4 eggs
1/2 stalk celery, chopped
1/4 cup sweet relish
1 clove garlic, minced
2 tablespoons prepared mustard
1/2 cup mayonnaise
salt and pepper to taste
DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain and chop.
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop.
In a large bowl, combine the potatoes, eggs, celery, sweet relish, garlic, mustard, mayonnaise and salt and pepper. Gently mix together and serve warm.
