The salad at Olive Garden is a mix of greens: use some romaine, some endive, some leaf lettuce - and even some iceberg lettuce if you want to. There's red onion, black olives, a few pepperocini, tomatoes and croutons. Grate parmesean cheese on it, add dressing, and there you are.
The dressing is just oil and vinegar with Italian seasoning.

Kopykat Olive Garden Salad Mix
1 bag American Blend Dole Salad
4-5 slices Red Onion
4-6 Black Olives
2-4 Banana Peppers
1/2 C. Croutons
1 small Tomato Quartered
Freshly grated Parmesan Cheese
Methods/steps
Chill one salad bowl in freezer for at least 30 minutes. Place bag of salad in bowl. Place on top of lettuce but red onion, black olives, banana peppers, tomatoes, and croutons. Add some freshly grated Parmesan cheese if you like, and add plenty of Olive Garden Salad Dressing on top.

It's the dressing I think. They use an italian dressing that's just right. Not too runny, not too thick...(I'm starting to sound like Goldilocks :-) )
The Olive Garden House Dressing Recipe
A bottle of Paul Newman Own Family
Recipe Italian is delicious by itself but
if you want to increase the liquid volume to
"Stretch your money," try the imitation Olive
Garden Dressing Recipe.
16 ounce bottle, Paul Newman's (Newman's Own Family Recipe Italian.)
3/4 cup water
3 tablespoon "Progresso" Balsamic Vinegar
1/4 cup Extra Virgin Olive Oil
½ teaspoon "Mrs. Dash" Seasoning Blend
1 teaspoon corn syrup.
Mix everything together shaking well. Let Set 24 hours in refrigerator.

the Copycat Olive GArden Salad Mix is the right blend
but for the dressing is easier
8 oz. bottle of Paul Newmans vinegar and oil dressing
1 clove garlic, chopped
1/2 tsp dried basil
1/2 tsp dried oregano
3 pkgs. sweet and low
put ingredients into the bottle of dressing and shake well.
refrigerate 24 hours before serving.

The greens look like a bagged deluxe lettuce mix to me with carrot shreds,radish slices and purple cabbage shreds.Then they add a couple black olives to each bowl,a few slices of purple onion,a few peppercinni(little pickled peppers),a few tomato slices or wedges.They toss that with basic Italian dressing,and then toss on a hand full of croutons.When serving at the table,they offer to grate cheese on top.
