Usually something either citrusy (orange or grapefruit juice) or bland, such as tonic water. Even with a gin and tonic a lime is usually added. There's a reason why so many people drink "Gin & Juice".
"Gins are more than neutral spirits distilled from grain. They are reprocessed and redistilled with a flavorist's collection of assorted herbs and spices, primarily Juniper berries. Gin, like other clear spirits, is basically clean and bracing in flavor, but has fruity and herby overtones as well."
This may explain better as to why citrusy drinks are added to gin. To complement the "piney" taste that gin has.

Tonic is good. You could add a lime or olive, depending on the flavor you want.
Gin martinis are my favorite. On the rocks is the easiest. Just put a splash of dry vermouth and fill with gin. Garnish with a couple olives - or my favorite - blue cheese stuffed olives.
Gin is necessary in Long Island Ice Teas and all the copy-cat versions. So add a shot of vodka, gin, tequila, triple sec, and rum, to a little Coke and a little lemonade (or sprite)
There are copy-cats that use some fruity liquors instead of the tequila or triple sec, and then add a grape soda or something else.

The classic is (personally) best - Gin and Tonic with ice and a slice.
I personally like it with a wedge of lime instead of lemon, but each to their own.
It is also good in some cocktails including Tequila Sunrise and Sloe Gin.
Hope this helps!

Schweppes Indian tonic water is my favourite mixer for gin. Delicious! Oh, and don't forget a twist of lemon.
