i have to make dinner for my family. i am not a very good cook so i need something good but easy to make. it has to be good i want to impress!!

Chicken a la Good

Wonderful and easy dish made with chicken breast, honey ham, bacon, and Swiss cheese! Yummy

INGREDIENTS
4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
garlic salt to taste
ground black pepper to taste
1/2 pound thinly sliced ham
4 slices Swiss cheese
8 slices bacon
1 (14.5 ounce) can chicken broth
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Sprinkle each flattened breast with garlic salt and pepper to taste on both sides. Lay a slice of ham onto each breast, then a slice of Swiss cheese. Roll each breast up like a cinnamon roll. Secure with a toothpick if necessary. Wrap a piece of bacon loosely around each roll. Place the rolled breasts in a 2 quart glass baking dish and pour in chicken broth.
Bake for 30 to 35 minutes in the preheated oven, or until the juices run clear. Broil for a few minutes before serving to crisp up the bacon.

OR

Easy Baked Chicken Cordon Bleu

Easy recipe that tastes like you cooked all day. Chicken breasts are wrapped around ham and mozzarella cheese for a change in this version of the classic baked dish.

INGREDIENTS
6 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
6 string cheese sticks
6 slices ham
1/2 cup butter, melted
1 cup seasoned dry bread crumbs
toothpicks
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Lay out the pounded chicken breasts on a clean surface. Place a slice of ham on each piece, then one stick of cheese. Roll the chicken up around the cheese and ham, and secure with toothpicks. Dip each roll in melted butter, then roll in bread crumbs. Place in a shallow baking dish.
Bake for 40 minutes in the preheated oven, or until chicken is browned and juices run clear.

OR

Easy Beef Strogonoff

This used to be my favorite dish growing up. I never knew it was so easy to make. Growing up CAN be fun!

INGREDIENTS
1 pound ground beef
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 cube beef bouillon
1 medium onion, chopped
8 ounces fresh mushrooms, sliced
1 pint sour cream
4 ounces egg noodles, cooked and drained
DIRECTIONS
In a large skillet brown beef in oil over medium high heat. When meat is browned, drain excess fat from skillet. Add garlic powder, salt and pepper and stir in.
Add bouillon, onion and mushrooms to skillet and saute until onions are translucent. Remove from heat (very important) and add sour cream. Stir all together and serve over hot cooked egg noodles.

Easy Lasagna

Quick, easy lasagna that tastes great!

INGREDIENTS
10 ounces lasagna noodles
1 1/2 pounds lean ground beef
3 cups cottage cheese
2 eggs
1 teaspoon garlic powder
2 tablespoons dried parsley
salt and pepper to taste
1 (6 ounce) can tomato paste
2 (6.5 ounce) cans tomato sauce
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
In a skillet, brown ground beef. Using a fork, mix cottage cheese, eggs, garlic powder, parsley, salt and pepper. In a separate bowl combine tomato paste and tomato sauce.
In a 9x13 inch baking pan, layer noodles, ground beef, tomato sauce mixture and cottage cheese mixture. Two layers of each will fit. Cover with tin foil and bake for 30 minutes. Remove tin foil the last 8 minutes of baking time.

Chicken and Mandarin Orange Salad is easy and elegant:

1 bag mixed salad greens
1 package chicken nuggets
2 small cans mandarin orange slices, drained
1/2 C. slivered almonds
1 bottle raspberry vinaigrette dressing

Bake chicken nuggets according to package directions. Place the lettuce mix in a large bowl, and toss with the mandarin orange slices and almonds. Top with hot chicken nuggets, and drizzle lightly with vinaigrette dressing.

Pass addition dressing when serving, if desired.
Serve with bread sticks (they're in the refrigerator case along with the canned rolls and biscuits) and deli fruit salad for a complete meal.

For dessert, you could make a Fruit Trifle:

2 Sara Lee pound cakes, cut into cubes
2 packages frozen fruit, such as peaches or strawberries, partially thawed
1 large container Cool Whip

Place a layer of cake cubes in a pretty glass dish or casserole. Top with a layer of fruit and Cool Whip. Repeat until all cake and fruit has been used, ending with a layer of Cool Whip.

Stuffed Bacon Cheeseburgers
1/2 cup shredded Monterey jack
4 slices cooked bacon, chopped
1 pound ground chuck
Kosher salt and freshly ground black pepper
4 large hamburger buns, split
Ketchup, mayonnaise, and mustard, for serving
Lettuce, sliced tomato, onion, and avocado, for serving

Combine the jack cheese and chopped bacon in a bowl. Put the beef in another bowl and season with salt and pepper; use a rubber spatula to mix it in. Flatten 1/4 of the meat mixture in the palm of your hand. Squeeze together about a tablespoon of the cheese and bacon mixture to make a little nugget; put it in the center of the ground beef. Bring up the sides of the patty over the filling, making sure the cheese is completely covered by the meat. Flatten slightly for a nice patty shape. Set them side by side on a platter in the refrigerator while preparing the grill.
Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot. Brush the grates with oil to keep the burgers from sticking. Grill the burgers for 8 minutes per side for medium. (The USDA recommends cooking ground beef until it is no longer pink and the internal temperature is 160 degrees F.) Remove the burgers to a clean side plate while you toast the buns.
Rub the grill rack with more oil and place the buns cut-side down, toast for 1 minute. Serve the burgers with your favorite condiment and any garnish you like, such as lettuce, sliced tomato, onion, and/or avocado.

French Fries
6 large red potatoes, skins on
Oil, for frying
1 large sweet onion
Salt and pepper

Using a large pot, boil potatoes with skins on until almost done. Allow to cool, and cut potatoes into long strips, approximately 1/4 to 1/2-inch wide and thick. In a large pot or fryer, heat oil to 350 degrees. Par-fry the potatoes for 5 to 6 minutes. Potatoes should be limp. Remove potatoes and place onto paper towels and allow to drain. Let sit for 1 to 2 hours at room temperature.
Cut onions into 1/2-inch wedges. Just before serving time, place potatoes and onions into oil heated to 375 degrees F for 3 to 5 minutes, or until brown. Remove fries from oil, drain on paper towel, and while still hot, season with salt and pepper.

STIR-FRIED RICE WITH PORK

1/2 cup green onion, sliced
1/2 cup celery, diagonally sliced
2 cups pork roast, diced
1 tablespoon fresh garlic, finely minced
2 tablespoons oil
3 cups cooked rice, cold
1 cup water chestnuts, canned, sliced
1/8 teaspoon pepper
1/4 teaspoon salt (or hot salt)
1 egg, slightly beaten
pinch of hot pepper flakes or cayenne, to taste
2-3 tablespoons soy sauce

Sauté onions, celery, and pork in oil until vegetables are tender crisp.
Add rice and water chestnuts. Combine pepper, salt, egg and soy sauce.

Stir into rice mixture. Cook, stirring 2 to 3 minutes or until heated.


Variations:

#1 Add cooked cocktail shrimp during last 5 minutes of cooking.
#2 Stir in 1 small can or 1 cup fresh bean sprouts during last 10 minutes of cooking.
#3 Add 1 1/2 cups snow peas or sugar snap peas; sauté with green onions.
#4 1/8 cup finely minced fresh ginger added and a tablespoon of lemon juice adds a fresh new twist. Serve over cooked Thai noodles.
Makes 6 servings.

Make Tuna helper, a tossed salad, and some warm toasted Italian bread with butter and garlic. Quick and easy, and simply delicious! Don't forget something to wash it down with, like some fresh ice water or lemonade. :)

Can you be more specific?? How many are you feeding, are you looking for a meat based meal or veggie based meal?? What kind of food do they like??? I was gonna suggest some Shrimp Scampi (simple!!!) atop some Linguine with a green salad and some good Artisan bread......let us know, as I'm Cordon Bleu Trained!!!

you can never go wrong with spaghetti with some garlic bread on the side. its easy and simple.
buy a box of spaghetti, a can of prego traditional sauce, some french bread, butter, garlic powder.

boil the spaghetti with a tsp of salt.
once it is done drain it.
add the sauce and mix it up.

for the garlic bread, cut up the french bread into the slices you want. butter them up and sizzle a bit of garlic powder on it. pop them in the broiler.

before eating the spaghetti you can toss a salad. buy some iceberg lettuce, croutons, bacon bits and some shredded cheese to go on top. add italian dressing since spaghetti is italian. hope that it helps.

Just do a simple stir fry. Cut up some pieces of steak or chicken, peppers, onions, and rice. Add a little water and fry it up. Quick and easy but great!

Pasta is good, easy and cheap. serve it with a tasty sauce a nice salad and some fresh bread. Delicious and pretty.

Sauces; basil pesto, bolognese, seafood and tomato, etc..

Boil Pasta, and cook vegetables over medium heat. Put vegetables over pasta and serve with a alfredo sauce. It tastes great if you add chicken pieces.

I happen to agree with the lasagna. I read the recipe, but PLEASE don't use cottage cheese. It just isn't right. Use ricotta cheese instead. Can be found in the same place as cottage cheese. The rest of the recipe is find. But really.....cottage cheese??? Just don't get that.
