No it's just part of the sweet potato.
A couple of tips. Sweet potatoes discolour if you peel them too long before you plan to cook them.
Also, try roasting them with your Sunday lunch. I do a roasted medley of vegetables. Par-boiled potatoes, parsnips, and carrots and raw mushrooms sweet peppers and sweet potatoes. The veg are briefly marinated in extra virgin olive oil with garlic, salt, pepper and a few herbs (especially fresh rosemary) and then all roasted together (with the marinade as the roasting oil). Watch the peppers - they can burn, so I usually leave them out until the last 15 minutes or so. They go well with all roasts, but especially roast lamb.

Sounds like mould.They should be nice and peachy in colour once you peel the skins off.
In the shop they might have been damp where stored.I use sweet potatoes a lot, and have never come across white inside.
If there is a musty smell once you have cut them open, it could be mould.

I cook sweet potatoes all the time.. The white bits are ok. It depends on the type of sweet potato you buy. When it's mouldy it goes soft and black. I have used well pass the sell by date.

Its likely just the wax they coat them with. Give it a good scrub with a stiff brush, should be fine. I dont know why the silly fools think they need to coat our veggies with waxes and resins-give us the stuff in its natural state for pitys sake. If I want to wax it, I will do it myself!
