You can peel it, then cut on each side of the stone, then cut the sides. Then you can slice that up or dice it depending on what you are doing. You could also leave the skin on and just cut like you would if you were going to make chips with a potato. Or you can not peel it cut on either side of the stone, take those halves and make vertical and horizontal cuts and flip inside out and take a spoon and knock off the squares.
