This is a versatile recipe for Savoury Impossible Pie that I have from an Australian friend. I've seen similar recipes on the web using Bisquick, but plain flour is more readily available and cheaper ;-)
Make the basic batter:
4 eggs, beaten
2 cups milk
1/3 cup melted butter
1/2 cup plain flour
Mix well, and add
drained chopped cooked or tinned asparagus
1 or 2 handfuls of grated cheese
Pour into a buttered 25cm/10"pie plate or 7"x 11" pan
Bake 200 oC (400 oF) c35-40'.
Variations: add to basic batter
Tinned tuna or salmon, finely chopped onion, parsley, cheese
OR
Crisply cooked bacon, tomato, sliced onions
OR
Cubed ham, thawed frozen peas, grated cheese
OR
Thawed frozen mixed veg, grated cheese
OR
Peeled prawns or crabmeat, finely sliced spring onions/shallots, grated cheese
This is a good recipe for using up small amounts of leftover cooked meat or veg.

Ingredients:

4 ounces Bacon, diced
1/4 cup Onion, diced
3 Swiss cheese slices
1/4 pound Asparagus, steamed and cut into 1/4-inch pieces
3 Eggs
1 1/2 cup Cream
Salt and pepper to taste

Directions:

Pre-heat the oven to 375.

Brown the bacon in a skillet. Drain on paper towels. Add the onion to the bacon grease and cook until just soft. Set aside.

Sprinkle the bacon in the pie tin. Top with the cheese slices. Add the cooked asparagus and onions. Lightly beat the eggs. Blend in the cream. Season. Pour into the crust.

Place on a cookie sheet and bake for 30 minutes (or until the quiche is firm and lightly browned). Serve warm or at room temperature.

You should be able to omit the pastry from any quiche recipe. Just bake in a well-greased pan. It will take a little less time to bake, so start checking on it early.

The link below is for mini quiches with asparagus, ham and gruyere. I've made it a couple of times and it has become my favorite quiche filling. You could make it and bake it in a casserole dish without the pastry.

Asparagus Crustless Quiche

2 tablespoons extra virgin olive oil plus extra for pie plate
1 pound asparagus, tough ends snapped off and discarded, spears sliced into 1/2-inch pieces
4 large eggs
2 cloves garlic, finely chopped
1/2 cup freshly grated Parmesan or Romano cheese
1/2 cup dry bread crumbs
Sea salt and freshly ground black pepper, to taste
1 tablespoon chopped fresh flat-leaf parsley

1. Preheat oven to 350°F. Oil a 9-inch pie plate and reserve. In a heavy-bottomed skillet, heat olive oil and add asparagus, cooking around 4 minutes until bright green and crisp-tender. Remove from heat and reserve.

2. In a medium bowl, whisk together the eggs, garlic, cheese, and bread crumbs. Add salt, pepper, and fresh parsley, whisking again to combine.

3. Add asparagus and stir to combine. Pour mixture into the prepared pie plate and bake in preheated oven 30 to 35 minutes or until firm.

Serves 4.

Take your favorite broccoli quiche recipe & substitute the asparagus for the broccoli......I would use a good white cheddar instead of a yellow one for the cheese in this case........

Sounds yummy - I think I'll try one this weekend!

The recipes here look great, These can be made in a microwave - just use a glass pie plate, spray it. Eat it after cooking. The time depends on the # of eggs & other items.
