You can make a very good cake with canned pineapple and cake mix. That's what I do.
Drain the pineapple very good , saving the juice.
Mix the cake mix according to directions on box except use the pineapple juice instead of water to mix it.
Put soft butter into the pan you're going to use.
sprean it over the sides and bottom until coated good.
Then pur lots of brown sugar on to the sides and bottom of pan. Use your hand, pat it down into the butter.
Put your pineapple over the brown sugar.
Pour your cake mix in and smooth evenly over the pan.
Bake in 375 degree oven until brown on top and well done.
Take from the oven and turn upside down onto a plate,
You have your delicious pineapple cake.

PINEAPPLE UPSIDE DOWN CAKE 2/3 cup butter 3/4 cup brown sugar Place the butter and brown sugar in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch. 1 can pineapple slices maraschino cherries (enough to fill centers of pineapples) Place pineapples in the butter and sugar mixture. Put cherries in the center of the pineapple. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge). Prepare a box of yellow cake mix following the directions on the box to mix the batter (do not bake in a separate pan; follow instructions below). Pour the batter over the pineapple and cherries. Bake at 350°F degrees. When the cake is done, loosen the edges with a butter knife. Remove from heat and allow to sit five minutes, then turn it upside down on a serving dish. Optional: Instead of using a cake mix, you can prepare the batter from scratch using the recipe below, or any recipe for yellow cake. Scratch Cake: 1 cup flour 1 teaspoon baking powder 1/2 teaspoon salt 2 eggs 2/3 cup sugar 1/4 cup milk Combine ingredients and beat 1 minute. Pour batter over pineapples and cherries (same as above). Bake at 350°F and follow same steps as above

just mix up the cake and toss on top if you dont have cherries or pecans its ok without them
Pineapple Upside-Down Cake
Homemade Pineapple Upside-Down Cake is so good and so pretty. It's special enough for company, but quick enough for just the family.
* 1/4 cup butter
* 1 cup firmly packed brown sugar
* 3/4 cup chopped pecans
* 20-ounce can of pineapple slices, drained, reserving 5 tablespoons juice
* 3 eggs, separated
* 1 cup sugar
* 1 cup all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* maraschino cherries
Preheat oven to 350°F.
Melt the butter in a 9-inch cast iron skillet. Add the brown sugar and pecans; stir well to thoroughly combine, then turn off the heat -- don't cook it. Arrange 8 pineapple slices in a single layer over the brown sugar mixture (your 9-inch skillet should accommodate 8 slices without overlapping). Set the skillet aside.
Combine the flour, baking powder and salt in a bowl; set aside.
Beat the egg yolks at medium speed until they are thick and lemon colored. Gradually add the sugar, continuing to beat. Add the flour mixture to the yolk mixture, and stir in the reserved pineapple juice.
Beat the egg whites until stiff peaks form. Fold the whites into the cake batter. Pour or spoon the batter evenly over the pineapple slices.
Bake at 350°F for 40 to 45 minutes. Cool the cake in the skillet for 30 minutes; then invert it onto a serving plate. Place a maraschino cherry in the center of each pineapple ring.

Yes, I've done this before with a mix and canned pineapple. Mix up the drained pineapple in a bowl with about 1/2 stick softened butter,1 cup brown sugar, 1/2 tsp. ground cinnamon. Pour that into the bottom of your greased pan and then pour the cake mix on top of that. Bake it like the box says, but you will have to add a few minutes because of the pineapple.

I love pineapple upside down cake
mix the cake box as usual except change the water for milk or butter milk for added richness & softness to the cake, then take some brown or regular sugar in a pot add some pineapple juice or water a hint of cinnamon then over medium flame make a syrop them pour it inside tha cake mold and layer the pineapples then add the cake mix on top and bake, remember to de-mold tha cake asap into a serving dish do not let it get too cold or it will stick to the pan

You can use a cake mix, I prefer "Duncan Hines", but your "Betty Crocker" will work out just fine.
*READ SOME OF THESE RECIPES HERE...ONE IS TELLING YOU TO USE SUGAR...USE SHOULD BEING USING BROWN SUGAR ONLY & ONE RECIPE IS TELLING YOU TO POUR HALF THE CAKE BATTER INTO THE PAN ...WHAT ABOUT THE OTHER HALF OF THE BATTER???

Dream Pineapple Upside-Down Cake
Prep Time: 15 min
Total Time: 1 hr 10 min
Makes: 16 servings
3 cans (8 oz. each) pineapple slices in juice, undrained
1 cup firmly packed brown sugar
1/3 cup butter or margarine, melted
6 maraschino cherries, halved
1/2 cup PLANTERS Chopped Pecans
1 pkg. (2-layer size) yellow cake mix
1 envelope DREAM WHIP Whipped Topping Mix
4 eggs
1 cup cold water
PREHEAT oven to 350°F. Drain pineapple, reserving 2 Tbsp. of the juice; set aside. Mix brown sugar and butter in 13x9-inch baking pan. Arrange pineapple slices in pan, cutting slices if necessary to evenly fit onto bottom of pan. Place cherry half, cut side up, in center of each slice. Sprinkle with the reserved pineapple juice and pecans.
BEAT dry cake mix, dry whipped topping mix, eggs and water in large bowl with electric mixer on low speed 2 minutes. Beat on medium speed 4 minutes. Carefully spoon into prepared pan.
BAKE 50 to 55 minutes or until top springs back when lightly pressed. Let stand 10 minutes; invert onto serving plate. Let stand 1 minute; remove pan. Serve warm or cooled.

Ingredients:

1/2 cup brown sugar, packed
1 can (8 1/2 oz.) pineapple slices, drained & cut in halves
Maraschino cherries
Pecan halves
1 package Betty Crocker yellow cake mix
Directions:
Heat oven to 350 degrees. Melt butter over low heat in 9 inch layer pan. Sprinkle brown sugar evenly over butter. Arrange pineapple halves, cherries and pecans over sugar mixture. Prepare cake mix as directed on package.
Pour half the batter (about 2 1/2 cups) evenly over fruit in pan. Bake 35 to 45 minutes or until toothpick inserted in center comes out clean.
Invert at once onto serving plate. Leave pan over cake a few minutes.
Serve warm, plain or with whipped cream

You will also need brown sugar what you do is carmelize the brown sugar in the cake pan 1st then add the pinnapple rings and if you have maracchino cherries put them in the pinn rings then add the prepared cake mix and bake, let it set for 5 mins when done and then put a plate over the pan and flip it over and there ya go pinnapple upside down cake

Sure take and drain the pineapples.Now take the pan and Pam or butter well.Now sprinkle brown sugar,on that.Place your pineapples on the sugar.(sugar should be thick)Now make the cake as on back of box.Pour on top of the pineapples and brown sugar,then bake as directed.Take from oven and turn onto a plate while hot,theres your pineapple upside down cake.Enjoy.....
