For the parsley.....some tabbouleh would be great. Serve it with some hommus and pita bread.

Spanish Rice:

One cup of water, one cup of tomato sauce and water mixed with parsley, chives, and seasoned salt(to taste) and anatto(for color). Add a table spoon of cooking wine, and a chicken bouillon cube(substitute the water mixed with the tomato sauce with chicken broth if unable to find bouiloon cubes).Simmer to a boil. Drop a cup of rice in the boiling water. Boil for ten minutes on high heat. then drop to the lowest heat setting and cover. Every ten minutes flip the rice with a spoon until it is dry. You may add sea food and other vegetables to taste and make it a paella.

Baked potatoes with sour cream and chives and a sprig of parsley.

I grew parley once and I ended up with a mass of it, so I used to add it to stew type meals right at the end of cooking. I'm not sure it did anything for the flavour but it is so high vitamin C so is very good for you. Chives can be added to almost any dish as they have a very mild onion flavour. Don't forget parley with almost any fish. I think it may also freeze. I think it may come out a bit mushy when thawed but probably could be used for sauces.

I know you can dry parsley, save it in a container and use it throughout the year. And you can share the dry parsley with neighbors, friends and family as gifts. But both parsley and chives are used in butter, on like buttered italian bread,and in butter like for potatoes, both are used extensively in salads, in spaghetti sauce, maybe in taco sauce or sloppy joe sauce.

I've seen recipes for parsley pesto before. And epicurious.com has a good one for hummus with parsley oil. And I like chopping it for topping pasta. Chives can be used anywhere green onions are needed. Topping baked potatoes, chili, soups, Mexican food, pasta salads, you name it.

i love adding freshly chopped chives to sour cream for baked potatoes also like cottage cheese with chives

chicken mince chop both herbs quarter inch add olive oil to taste plus salt & pepper to taste or penut oil unless youre a vegiterian then ive gongded out
