The best and easiest is (in MO) a pork butt roast, toss it in the crock pot, add a bottle of BBQ sauce, a dry packet of Lipton Beefy Onion soup, a cup of water and turn on low for about 8-10 hours.........shred the pork roast with two forks and serve on buns with Cole slaw and baked beans.......Easy enough???

I made this recipe up years ago. It's very simple and is great in the crock pot:
Super Bowl Chili Recipe
2 lbs ground beef
2 chopped onions
2 chopped green peppers or red peppers
2 packets chili seasoning mix
2 cans mild chili beans or hot chili beans
1 (46 ounce) can tomato juice
garlic salt
Tabasco sauce
No more than 2 teaspoons unsweetened cocoa powder
Brown the ground beef, drain. Mix the beef with the onions, peppers, mix packets, drained beans and the tomato juice in the crock-pot. Set to low and let simmer for 4-6 hours.
During the last half hour add the cocoa powder, Tabasco and garlic to taste.

My son is picky, but loves this:
PORK WITH ROOT VEGGIES
Choose an assortment of root veggies, like peeled carrots, parsnips, rutabaga, potatoes and onions. Whatever you like. Cut into large chunks and place in crockpot. Place pork roast (that you have generously salted and peppered) on top of that. Pour 1-2 cups of liquid (apple cider, chicken broth, white wine, or mix it up) over pork. Place herbs like thyme, and some chopped garlic (at least 3 cloves) on top of pork. Cook on low about 8 hrs.

Barbecued pork. Fill your crockpot with pork ribs. Pour in a jar of your favorite bbq sauce and then fill the bottle with water, shake and add. Cover. Simmer on low 8 hours. The meat falls right off the bone. Yummy.
