Try this its a dish my mother makes, whip the avocado up untill its not hard at all but not too too soft put in vinegar and olive oil, fry some boneless chicken breast put what ever you like on it tastes great no matter what, and then you cut up the chicken in bite size peices and mix it in the avocado we then put it all in warm pita bread and there it tastes soooo good you should try it!

A great summer salad is to slice avocados, oranges and red onions, and layer accordian style accross a platter- you could place a bed of mixed baby greens below- and drizzle with a raspberry vinagrette ( paul Newmans is good)
Avocado soup is really good- especially cold on a hot summer day:
Avocado Soup
This soup is delicious hot or cold. While this recipe makes four servings, each just under one cup, you may want to double it, either to accommodate more people or larger appetites.
2 cups chicken broth
1 Very ripe, large Haas avocado (see below)
1 cup heavy (whipping) cream
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon white pepper
1/4 cup dry sherry
2 tablespoons fresh lemon juice
Heat the chicken broth until hot, not boiling. Set aside.
Peel the avocado and remove the seed. Cut into several pieces, place in the food processor or blender, and purée. Turn off the blender and pour in the whipping cream, followed by the hot chicken broth, cumin, salt, white pepper, sherry and lemon juice. Pulse a few times, just until mixture is blended. Taste and add more salt and pepper, if desired.
Serve immediately, or chill for at least two hours and serve.

mmmm....ceviche is a great way to use some diced avocado, and it's perfect in the summertime!
1 pound fresh conch or scallops, or combination
1 cup fresh lime juice
1 cup diced avocado
1/2 cup minced red onion
1/2 cup finely chopped seeded tomato
1/4 cup cilantro
2 tablespoons olive oil
2 teaspoons minced jalapeno
1/2 teaspoon salt
1/8 teaspoon cayenne
1/4 teaspoon cumin
Pat the seafood dry and place in a glass bowl. Cover with the lime juice and let marinate until opaque, about 3 hours, refrigerated. Place the seafood in a clean bowl, and reserve the lime juice.
Add the remaining ingredients to the seafood, gently stirring to mix. Add reserved lime juice to taste. Refrigerate for 1 hour, and serve chilled in a tall martini or cocktail glass.

Recipes for tortilla soup often add chunks of avocado to the broth. Its an interesting contrast in flavor and texture.
Also, often sliced in turkey sandwiches. added to burgers, and diced in salads.

Dice up a ripe but firm avocado with diced watermelon. Squeeze half a lime onto it and toss. It makes a nice summer side-salad. Sounds odd, but we love it.

i like to slice up some tomato avocado and thinly sliced onion. then lay them out on a platter decoratively and drizzly olive over it all and salt and pepper. makes me hungry just thinking about it.
