the ship's hull is ground (earth). ship floats in water, water is conductor, water contacts earth.

Ships dont use conventional shoreside earth wires. If a piece of equipment has an earth it is detected by earth monitoring equipment. And then repaired.
All equipment has to be bonded to the ships hull using some sort of earth bonding.
However passenger ship cabins use conventional shore side earth wiring.

Earths to the hull which earths to the water which earths to the... ocean floor (thought I was going to say Earth didn't you?).

To stop corrosion on the hull due to electrical potential there's a huge block of zinc screwed onto it called a sacrififical anode which oxidises and dissolves to spare the hull.
