i havent tried liver yet but since its so good for you i want to give it a whirl. im not too psyched to have onions as a huge part of the recipe so i was hoping there were some variations people could suggest.

BEEF LIVER CASSEROLE

1 lb. sliced bacon
1 lb. beef liver, cut in bite-size pieces
1 lg. can stewed tomatoes, chopped (save juice)
1 lg. onion, sliced
Dash of sugar
Dash of oregano

Fry bacon. Remove from pan and drain. Fry onion in bacon grease. Place liver in large casserole dish. Add bacon and onion. Add tomatoes, including juice. Add oregano and sugar. Bake at 350 degrees for 30 minutes, stirring once or twice.

I only prefer liver now and then....not because I think it tastes awful (well, it can if not cooked right) but because it truly is an acquired taste.
When we cook liver, we pan-fry it in olive oil and we use Worcestershire Sauce as a marinade for it. It gives it a more beefy taste...and sometimes, depending on the strength of the liver taste, it can mimick thin breakfast steak. And yes, we usually cut up onions in it to cut down on the strong liver flavor....but with or without onions, it's okay. My son likes to throw in mushrooms sometimes.

You do have to acquire a taste for liver and onions. I grew up on it. And you do need onions. Rinse raw liver under cold water, dredge in flour seasoned with salt and pepper. Fry in butter and sliced onions til it gets a little crusty on both sides. It is also high in iron and cholesteral.

Not too sure where you got the idea that liver is good for you-it is high in iron but also fat and cholesterol. However, you can dip it in flour and fry or brush with oil and broil. Onions need not be included at all but many folks like it with mushrooms and bacon (more fat).

Wing it! i could prepare dinner the beef up separatly in with some hearty spices such as you may with corned beef. Then on the story end i could upload the greens and prepare dinner for yet another 20 minutes (aside from the celery and cabbage). stress and get rid of the long-cooked cabbage and then make a white sauce with numerous garlic and voila. For the tail end greens i could put in potatoes, celery, cabbage, corn, carrots and perchance some rice. Cooking stuff like it is trouble-free, that's the sensible stuff like putting it interior the cabbage bowl that makes it exciting.

Slowly fry it in butter or light olive oil.

(Cooking it fast dries it out & makes it tough.)

Cook it til it is done, but not burnt. (Use a butterknife to make test cuts to look for doneness in the middle. You will know it is done or raw when you see it.)

Some folks like steak sauce or a dash of worcestershire sauce also.

My grandmother always made it fried with onions. I personally don't like it. I would find something else good for you. LOL
