yes american express travelers checks can be used in australia & are accepted at large establishments. however there may be a service charge for using them. Best to have them in Australian Dollars. You can cash them at any bureau de change in banks in large cities like Sydney, Melbourne, Brisbane, etc.
Visa & MC are widely accepted BUT your bank or credit card company may charge you a fairly large fee each time you use it or use it at an ATM. so don't use it for small amounts.

Yes they can but you will probably have to change them to Australian dollars at a Change Bureau unless they were in Australian dollars. Visa, Mastercard, Amex and Diners are all accepted in Australia.
