These potatoes are a huge hit when they arrive at a potluck!

BAKED HASH BROWNS

2-1/2 pounds frozen hash browns, thawed out
2 cups sour cream
2-1/2 cups shredded cheddar cheese
½ stick melted butter
½ cup finely chopped onions
2 cans cream of mushrooms soup
salt and white pepper to taste

Mix all ingredients in a large bowl. Place in a 13x9x2-inch baking dish.

Cover with foil and bake at 325 degrees for 2-1/2 hours.
Stir after first hour.
Remove foil for last 20 minutes or so.

Makes 8 servings without doubling.

Double recipe for potluck parties.
Use a deep lasagna pan.
Increase baking time by ½ to 1 hour.
Don’t let top brown too much – cover with foil.

Roasted Cajun Potatoes
INGREDIENTS

* 2 1/2 pounds medium red potatoes
* 1/4 cup olive oil
* 2 shallots, chopped
* 1 garlic clove, minced
* 1 teaspoon salt
* 1/2 teaspoon paprika
* 1/2 teaspoon cayenne pepper
* 1/2 teaspoon pepper
* 2 tablespoons minced fresh parsley

DIRECTIONS

1. Cut each potato lengthwise into eight wedges. In a large bowl, combine the oil, shallots, garlic, salt, paprika, cayenne and pepper; add potatoes and toss to coat. Place in greased roasting pan.
2. Bake, uncovered, at 450 degrees F for 45-50 minutes or until tender and golden brown, turning every 15 minutes. Sprinkle with parsley.

My favorite thing to do is get some lipton onion soup dry mix, and bit of melted butter, and some new potatoes cut into quarter-wedges. Toss everything together in the broiler pan cook on 450, tossing everything about every 10 minutes, until the potatos on tender on the inside and crisp on the outside.

This is fabulous, always a big hit, and really easy to do.

Sometimes at parties, I make a baked potato bar. Bake the potatoes in the oven (not microwave) and have lots of different toppings. I have everything from broccoli to sour cream, salsa, chives, shredded cheese, etc. It's a fun way to add variety to an old favorite.

I make a potatoe casserole ,,, I just slice potatoes about medium ,put in a baking dish add cauliflower, onions and butter ,,, season with salt, black pepper and garlic ,bake at 350 until potatoes are tender. I then top with grated cheese and let brown , is very yummy.

1kg Jersey Royals (Baby potatoes)
1 tablespoon olive oil
Maldon sea salt and freshly ground black pepper
2 sprigs of rosemary leaves picked and bashed

Wash potatoes and boil until almost tender.
When done, drain and drizzle with just a little olive oil and roll in a tablespoon of Maldon sea salt, a little freshly ground black pepper and rosemary.
Preheat the oven to 220 degrees celsius.
Put the potatoes in a roasting tray and cook in the oven for 25 minutes until golden.

Have you ever tried twice backed?
You make like regular mashed potatoes, then sprinkle cheese on top and bake in the oven or microwave.
Soooooooooooo good.
You can also cut them up, add mushroom soup, garlic, and cheese, then bake.
Also try slicing them into chunks and pour italian dressing on them and bake.

my husband loves potatoes too. he likes his whipped so we peel russetts boil them till soft but firm drain the water off add butter salt and milk and use an electric mixer to whip them till fluffy,also with left over mashed potatoes you can roll them into a ball and cover with bread crumbs and saute on both sides in a fry pan with a little olive oil for potato croquettes

We just made this for the first time tonight & it was awesome -

Boil your potatoes until soft, then you kind of just press down on them once with a masher or a fork so they're kind of broken up (skins on), then sprinkle salt or whatever herbs you want on and bake in the oven until brown and crispy. We had them with salt, and they were really good!

POTATO PATTIES (INDIAN STYLE)

1 cup mashed potatoes
1/2 cup onion (finely chopped)
1/4 cup coriander (finely chopped)
1/2 cup green peas (boiled)
2 green chillies (finely chopped)
few drops of lemon juice
salt, red chilly powder, black pepper, to taste
1 cup corn flour

Mix all ingredients except the corn flour in a bowl. Make small patties and wrap with the corn flour. Now fry them in oil.
