If I were you I would concentrate on conditioning and yoga so you would not only be flexible but you would also have the stamina to keep up these activities. In the long run it will benefit you more and you will be able to participate in these activities you mentioned and be able to do them for a while instead for a mere 1 hour.

It doesn't matter about your age in martial arts. I know an actor that started martial arts when he was 18 years old.
And now, he have 3 black belts,2 yellow belts, and 2 white belts.
If you don't want to do this martial arts stuff, then I suggest you take yoga or skating.

If you train in effective martial arts, you will not need an insane amount of flexibility. Sure it helps; allows you to throw head kicks, play rubber guard, withstand some submissions, easier escape from bad positions etc., but it isn't necessary for the majority of effective moves. I don't care much for high kicks, but my guard game is important to me, so to increase relevant flexibility, I sit in lotus position (http://www.dkimages.com/discover/Home/Health-and-Beauty/Alternative-Health/Yoga/Exercises/Exercises-458.html
lean forward until it hurts, stay there for 30 seconds, shake out my legs, and repeat.

I don't imagine belly dancing requires much flexibility, does it?

Gymnastics and ballet classes probably have stretching incorporated into them, so your flexibility would increase just by attending. I doubt there is nothing they could have you do before then.

good luck

all Martial Arts offer great conditioning, look up Hatha Yoga to start.
