Why not sit down with your daughter and a cookbook that is directed towards kids, and you both plan the snack? If it's easy enough to make, perhaps she can make it? (my daughter is 8 and is quite competant in the kitchen).
I have the book that I included the link to (as well as a few others) and the recipes are simple, quite tastey and fun. This way, she can have that control over her snack, as well as gaining fun and experience in the kitchen!

A half a cup of cold green seedless grapes. It will quiche her thirst, it will give her something sweet, it will make her feel like she has had a bigger snack with the more grapes you give her, you don't have to worry about taking any wrappers out of her room, it's not a heavy late night snack, and it's healthy. Last but not least when she wakes up the next morning she will have a good BM

No Bake Bumpy Peanut Butter Nuggets serves 3
INGREDIENTS
2-1/2 teaspoons natural peanut butter
1-1/4 teaspoons nonfat dry milk powder
1-1/4 teaspoons unsweetened flaked coconut
1-1/2 teaspoons rolled oats
1/8 teaspoon ground cinnamon
1-1/4 teaspoons wheat germ
1-1/4 teaspoons unsweetened apple juice concentrate, thawed
DIRECTIONS
Combine peanut butter, milk powder, and coconut in a large mixing bowl. Stir in oats, ground cinnamon, wheat germ, and apple juice concentrate until thoroughly combined.
Shape the mixture into 1 inch balls. Chill thoroughly before serving; store remaining nuggets in the refrigerator.
Tiger Butter serves 4
INGREDIENTS
2-1/2 ounces white chocolate, chopped
2 tablespoons crunchy peanut butter
2 tablespoons and 2 teaspoons milk chocolate chips
DIRECTIONS
Butter a 10x15 pan. Set aside.
Place white chocolate in a medium-sized microwave-safe bowl. Microwave on High until melted, stirring frequently. Stir in peanut butter.
Spread into prepared pan. Drizzle with melted milk chocolate chips, stirring through mixture to create a marbled effect. Let stand until set. Break into bite-sized pieces. Calories: 189

My son asks for snacks 24/7. He's 7. At night he will have yogurt and a danimal, cheese and crackers, fruit roll ups, granola bars. Stuff that will fill him up but not bunches of sugar. He's 7 and I guess going through a growth spurt. I can't keep him fed! ha!

my daughter is 2 1/2 and loves chickin in a bisquit crackers and the squirt cheese for a bedtime snack. she says "this is a nice snack mommy"lol way tooo cute or goldfish crackers icecream cones with sprinkles on top um i dunno all kids are different. hope it helps maybe u should let her pick out what she wants at the store

Make sure you don't give sugar or caffeine (in chocolate) because she needs to fall asleep. Ideas:
crackers and cheese
popcorn with cinnamon
warm milk
toast with peanut butter
rice cakes
cheese sticks
pretzels with yogurt

let her make a fruit kabob my son loves them just make sure you cut the sharp end of the skewer off (if you dont have skewers straws work just fine)
my 6 yr olds fave:1 wooden skewer,put on apple slices, grapes,and pineapple chunks, dip in apple juice then roll in shredded coconut
he also loves when we throw grapes into each others mouth but be very very careful not to choke her

dont give her much, u dont need food when u are asleep. just give her a banana.....which is actually great before bed because it has a nutrient that relaxes muscles! if banana is boring, then slice it up and have her dip it in like maybe a tiny bit of peanut butter.

Give her carbohydrates, which help you fall asleep, but no protein, which would keep her up. My suggestion would be some crackers with a slice of cheese on each.
