Guacamole
INGREDIENTS
2 avocados
1/2 lemon, juiced
2 tablespoons chopped onion
1/2 teaspoon salt
2 tablespoons olive oil
DIRECTIONS
Cut the avocados into halves. Remove the seeds, and scoop out the pulp into a small bowl. Use a fork to mash the avocado. Stir in lemon juice, onion, salt, and olive oil. Cover the bowl, and refrigerate for 1 hour before serving.
Layered Taco Dip
INGREDIENTS
2 (8 ounce) packages cream cheese, softened
1 (16 ounce) package small curd cottage cheese
1 (1 ounce) package taco seasoning mix
1 teaspoon lemon juice
2 bunches green onions, chopped
1 (2 ounce) can diced black olives, drained
1 tomato, chopped
2 cups shredded lettuce
2 cups shredded Cheddar cheese
DIRECTIONS
In a medium bowl combine cream cheese, cottage cheese, taco seasoning and lemon juice.
In a glass bowl or on a serving platter, layer cheese mixture, green onions, black olives, tomatoes, lettuce and cheese.
Serve with tortilla chips

Mexican Almond Cookies
I N G R E D I E N T S
2 cups all-purpose flour
1 1/2 cups cornmeal
2 1/4 cups sugar
1 1/3 cups blanched almonds, toasted and ground
14 ounces butter, softened
6 egg yolks
50 blanched almonds or raisins (some for optional topping)
Optional Topping
French Meringue (recipe below)
I N S T R U C T I O N S
Preheat oven to 350°F.
Sift the flour and cornmeal onto the counter or into a bowl. Make a well in the center and add the sugar, ground almonds, butter and egg yolks. Knead all the ingredients together to form a dough. Shape bits of dough into little balls and place on buttered baking sheets.
Press an almond or raisin in the center of each ball and bake in preheated oven for 15 to 20 minutes until golden. Let cool then if you wish to use the meringue, top each cookie with a dollop of meringue and an almond or raisin.
French Meringue
4 egg whites
3/4 cup confectioner's sugar, sifted
Beat the egg whites until stiff and gradually fold in the confectioner's sugar.

Both of these are really good and perfect for a tex-mex spread:
Rice and Bean salad
4 cups cooked rice
2 cans black beans, drained and rinsed
1 can whole kernal corn, drained
1 cup mild salsa
3/4 cup mayo
chopped cilantro
Mix all ingredients and chill for a couple hours to meld flavors. Easily doubled- and you can change up the salsa type, use red beans instead of black, use parsley instead of cilantro, etc.
Triple Corn Bread
1 box krusteez honey cord bread mix
1 can whole kernal corn
1 can cream style corn
1 cup sour cream
2 eggs
2 tablespoons honey
Ignore the package directions and stir the above ingredients together. Cook in a large aluminum foil square cake pan for 25 minutes, pat with butter and cook 5 minutes more.

THE BEST BEAN DIP
Ingredients:
2 cans refried beans
1--8oz. bag shredded cheese
1 can tomato paste
1 pkg. taco seasoning
1--16oz. container sour cream
2 Tbsp. water
1 diced tomato
diced green onion(the long ones)
1 diced avacado
In a frying pan mix beans, taco seasoning, and tomato paste with water over low heat. Spread this into a glass baking dish. Spread sour cream over bean mixture. Sprinkle cheese over sour cream.
Bake at 350 until cheese is melted. Remove and sprinkle with tomato, onion & avacado. Serve with tortilla chips or wraps

How about Jalapeno bread? Or there is Mexican Cole Slaw...I haven't tried this recipe, but looked it up in hopes that it might help.

VINEGAR,DISTILLED 4-1/8 oz 1/2 cup
Method
1 Chill cabbage in covered container until crisp.
2 Combine Salad Dressing, salt, sugar, celery, tomatoes, onions, peppers, and vinegar.
3 Add to cabbage; mix well.
4 Cover; refrigerate until ready to serve. CCP: Hold for service at 41 F. or lower.

TORTILLA ROLL UPS
2 8oz. pkgs cream cheese
1 packet taco seasoning
black olives, chopped
green chiles, chopped
shredded cheese
package of large flour tortilla shells
Allow cream cheese to soften. Combine first five ingredients and spread on shells. Roll up like jelly roll and chill overnight.
Slice into 1 inch rolls and serve with salsa.

jalapeno appetizers
cut pepper in half long ways and scoop out the seeds. then fill the cavity with Philly cream cheese and rap with bacon using a toothpick to hold it together. bake at 350 until the cheese starts to ooze out.once you are at the party warm them in a micro or rap them up so that they will still be warm when you get there. they are still good cold though.

This is an awesome recipie-
You will need:
1 pkg. flour tortillas
1 Lg. tub of cream cheese
1 can chopped black olives
1 can green chillies
picante sauce(I like Pace; hot)
Mix cream cheese, olives and chiilies; spread on tortilla, then put another tortilla on top; slice like a quesidilla. In fact, I suppose you could consider this as a quesidilla, but a bit different, still. Dip slices in picante sauce. Enjoy!

What about cactus? That is something really different.
Personally, I love 7 layer dip but you probably already thought of that.
What about a selection of salsas - peach, pineapple, etc?
