Well first of all, sell the gas grill & get a charcoal one........After you get a charcoal grill, buy some charwood, not charcoal. Soak chips for at least an hour - the longer the better. Light coals & heat til medium/hot, then add chips in a smoker box. Take a whole chicken, clean & rinse then pat dry. Take 1 can of your favorite beer & drink about 1/4 - 1/3. Insert can into chicken's butt, then place on grill. Top chicken with a tent of foil, then close grill lid & cook til juices run clear. Best chicken you will ever eat!!

Experiment with your woods - use apple, cherry & my favorite peach.....Once you get used to grilling, get a barrel smoker for some awesome pork butt - It takes all day, but man is it worth it!!

I soak my wood chips about an hour, if you have a gas grill, you can use a tray & set it over the heat, & place the chicken away from the heat so it will absorb more smoke . Once the chicken forms a crust, you can move it closer to the heat & finish cooking

Soak the chips for 15-20 minutes. Close the cover so the smoke will flavor the chicken. Cook on medium heat for 30-45 minutes.

i also agree that a gas grill is nothing but an outdoor stove. i use charcoal for bar-b-cueing and i add mesquite chips to the fire. i don't soak them at all, and they still smoke. i also cut up onion and garlic and add that to the fire. it helps to add flavor and iv never had a complaint
