We have a smoker and a gas grill which is better for a flat-iron steak?

I think if you have the option, almost irregardless of the type of meat, charcoal is almost always better because of the enhanced flavor the meat is given in using charcoal or wood chips over using the gas grill.

While a charcoal grill theoretically gives better flavour, I'm more than pleased with my Weber gas grill. It's so much more convenient than charcoal - twist a knob, push a button and 10 minutes later we're good to grill. When I want the woody flavour, I can add some wood chips in a pouch and get a close equivalent. I say theoretically for the charcoal flavour since many use gobs of lighter fluid and cheap, man-made charcoal. I use the grill year-round up here in Michigan and wouldn't go back to charcoal except for maybe some special occasion.

Gas is easier and cooks the most consistent...however for pure taste, you can't beat charcoal!!
