How fast do you want to clog your heart? If I am doing up a batch for hunters at the cabin, I use a huge cast iron ( the best thing to use)skillet, Crisco cause the frying temp is just right and browns them up quick. To know if your oil is hot enough, take a droplet ( just a droplet, no more) of water and drip it into the hot oil. If that bubbles and fries out quick, you are ready. Add onions, salt, pepper and maybe some mild to hot peppers in for good measure. When brown on the outside and still soft on the inside, you're done. I generally slice mine to about 1/8 to 1/4 thick.

I use 1/2 butter and 1/2 olive oil. If you are going to fry potatoes you might as well go for the best! Also add garlic and onions.

First cut up the potatoes, into whatever shape you want, just make sure it's able to fry. Then put a pot of vegitable oil over the stove, and let it heat up until it starts bubbling. Use a spoon with the holes in it and place the potatoes into the spoon, and let it sit in the pot. You'll know when the fries are done, so when they are , take them out and let htem sit for a while to cool off. Add salt if you want, then bam! Done!

Try this....it's easier, less messy, and just as good!
OVEN BAKED FRIES
3 lg. potatoes
1 tbsp. oil (olive or vegetable)
Salt to taste
Wash potatoes and pat dry. Peel the potatoes or leave them unpeeled, if you prefer. Preheat oven to 400 degrees. Cut potatoes as you would cut French fries. Put them in a bowl with oil and salt and toss them well. Spread them on a lightly oiled baking sheet. Bake for 35 minutes or until they are lightly browned and tender. Serve them right away. Approximately 4 servings.

Being a southern girl - I use a dab of Crisco & of course my cast-iron skillet ( I have 2 cast-iron skillets - 1 for cornbread only & the other for my fried taters, fried okra, fried squash, etc...)
Cut up a few onions to fry with them as well - adds tons of flavor!!

If the potatoes are already cooked you can slow and I mean slow fry them in butter. If they are raw corn,vegatable, or crisco works woners. Just make sure you drain them or they will be soggy and oily tasting.

Any kid of oil will do. Throw some chopped up onion in there, too, and it'll be really yummy!!!

I use canola oil. Probably any vegtable oil will do (except olive oil - it would be a waste).
