He was probably told to do this for safety reasons. The large amount of oil they use is hot and can be dangerous. Any water that is left on the chicken - even if it is prepared with crumbs or coating after washing - may make the hot oil splatter, possibly causing injury.

I don't think this is a cooking technique as much as it's a safety procedure.

Generally, the birds will be cleaned and ready to put in the fryer when they arrive at the restaurant.

As a home cook, I would clean my chicken anyway and then blot it dry, but my suspicion is that the restaurant may have had an issue in the past where water was still present on or in the bird. Anyone who drops water in a hot vat of oil knows that it will immediately start spitting and you will have hot oil flying out at everyone and on the walls and other equipment. This is dangerous to the cooks, as well as messy if the oil gets down behind the panels, attracting bugs or vermin.

Since deep frying will kill any bacteria that may be present on the bird or in the cavity, there really is no need to wash it unless you dropped it onto a dirty plate or the floor. In those cases, a good restaurant would probably throw the bird away not to risk their reputation.

It is for safety. The water can actually cause a deep fryer to boil over.. No one is fast enough to get boiling grease off of them before being badly burned.

This is also why, when deep frying a turkey. it is slowly lowered into the hot oil. I have seen the lowering process take 2 minutes if the bird was large or not well blotted dry. Deep frying will hit temperatures plenty high enough to kill bacteria, in any event.

The Food and Drug Administration actually recommends that you NOT wash chicken before cooking it. The reason being that any possible bacteria on a portion of the chicken then gets spread all over the entire thing...As long as chicken is cooked properly and to the correct temperature, any bacteria present will be killed.

I'm sure it's very common. When you eat at a restaurant you are at the mercy of poorly educated, pissed-off people on the lowest socio-economic rung of the ladder who just love to stick it to those who are or even look more successful then they do.

Even Jesse Jackson said he used to spit in the food when he worked in a restaurant. That was before he learned how to spit on his own people and make a lot of money at it.

ok wash the meat before placing it inside the freezer.once it is frozen ,it is ready to fry indeep oil plus special sauce.
