Almost all of them are good for you. Some, though, can be toxic in large quantities (such as nasturtium leaves). Others can become toxic if left to dry out or become rancid (even a little rancid garlic can kill you).
As mentioned, garlic can lower blood pressure and boost immunity, and ginger can soothe nausea.
Peppermint and fennel can aid in digestion. Parsley can fight bad breath. Cayenne can boost your metabolism.
