you can make a tortellini salad with them
tear up spinach
cut cherry tomatoes or grape ones in half
red cabbage, green onions, and cooked crumbled bacon mix together with ranch dressing it's great you can also use the tri color tortellini

1 - 350g pkg. Western Classics Rainbow Torellini
15 mL (1 tbsp) Western Family Non-Hydrogenated Margarine
3 green onions, chopped
1 - 175g pkg. Western Family Smoked Ham, chopped
1 small red pepper, julienned
125 mL (1/2 c) Western Family Frozen Green Peas
1 - 330 mL pkg. Western Classics Four Cheese Sauce
50 mL (1/4 c) Western Family Grated Parmesan Cheese

1. Cook pasta according to package directions; drain.

2. Meanwhile, in skillet, melt margarine over medium heat; cook onions, red pepper and ham for about 5 minutes or until softened. Stir in peas.

Add cheese sauce and tortellini; cook for about 2 - 3 minutes or until heated through. Sprinkle with Parmesan cheese.

Makes 4 servings.

TORTELLINI IN FOUR CHEESE SAUCE

1 (16 oz.) pkg. frozen tortellini pasta
2 tbsp. butter
3/4 c. heavy cream
1 (8 oz.) container ricotta cheese
1 c. shredded skim milk Mozzarella cheese
2 tbsp. freshly grated Parmesan cheese
1/4 tsp. black pepper
1/4 c. chopped fresh parsley (or 1 tbsp. dried)
1/4 c. crumbled Gorgonzola or blue cheese

Boil tortellini 8 to 10 minutes, stirring frequently until tender. Meanwhile in deep 12 inch skillet over medium-low heat, melt butter; add cream, ricotta, Mozzarella, Parmesan and pepper. Cook 3 to 5 minutes, stirring constantly until cheeses are melted and mixture is blended. Drain tortellini - add to skillet along with parsley. Stir until well mixed. Serve immediately, sprinkling with gorgonzola and additional grated Parmesan if desired. Makes 6 servings

Classic Four Cheese Sauce

INGREDIENTS
1 (16 oz.) pkg. frozen tortellini pasta
2 cups heavy whipping cream
1/2 cup butter
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 cup shredded provolone cheese
1/2 cup grated Romano cheese
DIRECTIONS
Boil tortellini 8 to 10 minutes, stirring frequently until tender. Drain. Meanwhile, in a medium saucepan combine whipping cream and butter. Bring to a simmer over medium heat, stirring frequently until butter melts. Gradually stir in grated Parmesan cheese, grated mozzarella cheese, grated provolone cheese, and grated Romano cheese. Reduce heat to low, and continue to stir just until all cheese is melted. Pour sauce over pasta. Serve immediately, sauce will thicken upon standing.

You can use a basic marinara sauce over the top with some fresh grated Parmesan or Romano. If you like the richness of Alfredo sauce that would be nice too.
