Carausing is obviously drunkness as many have stated.
Why is it a sin? There are a couple reasons...
First, I would say it's becuase people make alcohol an idol. (Exodus 20:3 "You shall have no other gods before me.)
Second, I reread the passage you were reading in Galations and I think it's because Christians are supposed to live in accordance to God's spirit. We can use Jesus as an example and see he did none of these things:
[19] The acts of the sinful nature are obvious: sexual immorality, impurity and debauchery; [20] idolatry and witchcraft; hatred, discord, jealousy, fits of rage, selfish ambition, dissensions, factions 21and envy; drunkenness, orgies, and the like. I warn you, as I did before, that those who live like this will not inherit the kingdom of God).
When we desire these things, we are not desiring the things of God:
[22] But the fruit of the Spirit is love, joy, peace, patience, kindness, goodness, faithfulness, [23] gentleness and self-control. Against such things there is no law. [24] Those who belong to Christ Jesus have crucified the sinful nature with its passions and desires. 25Since we live by the Spirit, let us keep in step with the Spirit. [26] ]Let us not become conceited, provoking and envying each other.
Jesus has commanded to do two things:
Love God
Matthew 22:37
Jesus replied: " 'Love the Lord your God with all your heart and with all your soul and with all your mind.'
Love your Neighbor
Mark 12:31 (The second is this: 'Love your neighbor as yourself.' [ Lev. 19:18] There is no commandment greater than these."
We cannot do these things when we are drunk and do not have control of our minds or bodies.

Carousing is having fun, something which up until very recently all churches frowned upon. Most still do to a degree.

Drinking excessively. Derived from the German "time to leave the bar". According to the christians, doing anything that is enjoyable is a "sin".
