I have read several recipes designed for babies and some say you can freeze risotto and some say you cant.Is this because of the rice used?Will it be ok for a baby of 14 months?

If you have made the rissoto, you should never re heat rice, the bacteria in it muliplys and can make you ill.

I have frozen risotto and reheated it with mixed results. I would suggest that you freeze the risotto in small portions. Then add a tiny bit of liquid (water or wine). Microwave the risotto on low for a minute or two on medium to low power. At that point, check the risotto, if it is starting to defrost, stir, add a bit more liquid, and repeat the process until the risotto is at the temperature you like. Do not heat this on high power as it tends to get gummy.

Well I always make Risotto from scratch & freeze mine,it freezes quite well and still tastes really good re-heated.Not sure on the health aspect for a baby though-sorry.

it will separate ...the sauce
the texture will be different but for a baby you can stir the heck out of it...

if you are using all fresh then its fine but if you are using frozen then you cant re-freeze it
