RITZ CAKE
3 egg whites
1 c. sugar
1 c. chopped walnuts
1 tsp. vanilla
20 crushed Ritz (or Hi Ho) crackers
TOPPING:
1 pt. whipping cream
2-4 tbsp. Nestle's Quick
Chocolate shavings
Stiffly beat egg whites. Fold in sugar, nuts, vanilla and crackers. Put in 9 inch pie pan, greased. Bake 30 minutes at 350 degrees. Cool and chill.
Topping: Whip cream until it peaks, add Quick. Put on cake. Chill 3-5 hours. Add chocolate shavings before serving

RITZ CRACKER CAKE
60 Ritz crackers smashed to bits in a bag
1/4 c. softened butter
1/2 gal. French Vanilla Ice Cream melted, but not soupy (get good stuff)
2 small pks. instant coconut cream pudding mix (I don't care for coconut, therefore I use 1 pack vanilla and 1 pack banana cream, you use what you like)
1 1/4 c. cold whole milk
1 tub of whipped cream
Take about two thirds of the crushed crackers and add to the softened butter (start with less, you can always add more) and mix together until it forms a "wet" mix that can be pressed into the bottom of a 9 x 13 inch baking pan. Mix the pudding into the milk and stir in the softened ice cream. Pour over the pressed cracker/butter crumbs. Cover the top with whipped cream and sprinkle the remaining cracker crumbs on top. It must be kept cold, and it's best if it sits an hour or so before served.

2 rolls Ritz style crackers, crushed

2 envelopes Dream Whip
1-8 oz. pkg. room temperature cream cheese
1 large can crushed pineapple well drained
1/2 cup confectioners sugar
Instructions:
Mix crackers, baking powder and walnuts together. Add egg whites, sugar and vanilla. Press into a buttered 9 x 13 in. pan. Bake 40 minutes in a 300° oven. Cool completely. Mix 2 envelopes dream whip according to package directions. Stiffly beaten. Add room temperature cream cheese, crushed pineapple and 1/2 cup conf. sugar. Spread on cake. Refrigerate over night.

ICE CREAM CAKE
90 Ritz crackers
1 1/2 sticks butter
1 1/2 c. milk
12 oz. size Cool Whip
2 sm. vanilla instant puddings
1/2 gallon butter pecan ice cream
Crush 90 Ritz crackers in blender. Mix 1 1/2 sticks melted butter. Save 1/4 cup for top. Press into 9x13 inch pan. Bake 5 minutes at 350 degrees. Let cool.
Mix 1 1/2 cups milk with 2 small instant vanilla pudding. Add to 1/2 gallon ice cream (butter pecan or black walnut), slightly softened. Mix well with mixer and pour over cooled crust.
Spread Cool Whip on top and sprinkle with 1/4 cup crumbs. Refrigerate 1 hour.
NOTE: Do not use chocolate ice cream.

Cracker Cake
22 small crackers (e.g. Ritz, Jatz or Savoy, crushed finely)
120 g pecan nuts, fairly finely chopped
3 egg whites
1 cup caster sugar
2 teaspoons vanilla essence
1 pinch salt
1. Preheat oven to 170c.
2. Line the base of a round cake tin with baking paper.
3. Then butter& flour the tin.
4. Prepare the crackers& pecans, mix them together& set aside.
5. Put the egg whites& salt in mixer bowl& whip until foamy; then slowly shake in the sugar a little at a time- beating all the while.
6. Once it's all added, continue to beat until it is stiff& glossy (as though you are making meringue), it will take about 5 minutes.
7. With a spatula swirl in the vanilla, then very gently fold in the crackers& pecan mixture only until just combined- so the egg whites don't deflate too much.
8. Scoop into prepared tin& smooth down gently.
9. Bake for about 40 minutes until the top feels crunchy when lightly pressed& the middle seems to set.
10. Leave to cool in the tin on a rack for about 19 minutes, then carefully loosen around the edges& turn onto a rack.
11. Remove paper& cool completely.
12. When cool transfer to a serving plate& top with cream& stawberries.

45 Ritz crackers, crushed

1 tsp. baking powder
1 1/2 c. sugar
TOPPING:
16 oz. Cool Whip
1 (8 oz.) pkg. cream cheese
1 lg. can crushed pineapple, drained
CAKE: Beat egg whites until stiff. Add sugar and baking powder. Fold in nuts and crackers. Put in greased 9"x13" pan. Bake at 325 degrees for 30 minutes. Cool completely.
TOPPING: Mix cream cheese and pineapple together. Add Cool Whip. Place on top of cooled cake.
---------------RITZ CRACKER CHEESE CAKE
2 c. Ritz crackers, broken into pieces (40)
1 1/2 c. sugar
1 tsp. baking powder
4 egg whites, beaten stiff
1 c. chopped walnuts
Beat egg whites, sugar and baking powder. Beat well; mix in cracker crumbs and nuts. Pour into greased baking dish. Bake 20-25 minutes at 350 degrees or until golden brown; cool.
TOPPING:
8 oz. cream cheese
8 oz. Cool Whip
1 (15-25 oz.) can pineapple
Cream together cream cheese and Cool Whip; add pineapple. Spread on top of cooled cake. Refrigerate.
