I don't know but it's a religion. Religions don't have to make sense.

Once you figure out the mormon progression doctrine, it all falls into place. It's not supported (very well) biblically, but essentially the constant in the Universe "truth and light" mixed together makes 'Intelligence' which can be organized into spirits who can then become mortal beings, then immortal beings, and if good enough 'exhalted beings'. How this is all acomplished is anyone's guess, as mormon doctrine is incomplete at this point.
This 'doctrine' isn't exculsively Joseph Smiths, but was kicked around by many philosphers from the beginning. Emmanuel Swedenborg was pretty clear on the subject, and contributed a great deal to Smith's growing theology, although Smith took it further by declaring an ordinary human has the potential to become onmipotent, and this has been done since the beginning of time.
Apprarently our 'god' made man from either selective breeding of upright hominids, or out the mud - he already had the zillions of 'spirits on tap to be 'born', and has plenty of light and truth from Kolob to keep 'em coming...

We believe that God has a body of flesh and bone. Does that make God less, or that he can't be perfect? No! It means that He understands us better, and is not limited in His power or His ability. Having a perfected body doesn't mean that you can't be all powerful, or all knowing. We believe that His body, perfected and immortal, can help Him in creation. Why couldn't He create things while still having a body. That is a really close-minded way to look at things.
We believe that God created man. He created our spirits first, just like He did with Christ.
Here's a website that may help answer this question, and others you have. I've also added the official church website for you too.

Let's look at this a different way.
Jesus is God, is He not? Jesus once inhabited a human body, did He not? The Bible says that God created man in his own image, does it not?
What's the problem?

I don't get it.
first, we don't know if Heavenly Father once inhabited a "human body". And even if He did, He is now perfected, and exalted and all pwerful and He can create a human body if He wants to.

Makes about as much sense, as God being father, son and holy spirit.
Or that god manifested himself as man in Jesus.

So you do not believe your Dad is a boy before he become your dad.
And certainly you will not believe your grand father is a boy before he become your Dad's Dad.
Get it? Its basic progression cycles.
