My finace and I are on very low calorie diets so chicken breast is obviously a dinner time staple.

I usually marinade in FF Italian, a little hot sauce or worstichire sauce when grilling - or cook in a little white or red wine indoors. Another fav. of his is baked w/ a little breading stuffed with 'cheese' and turkey-ham (shhh.. he doesn't know it's fat free cheese).

But we're bored!!!

What's your favorite way to make light chicken (or turkey, let's get crazy!)

INGREDIENTS
6 skinless, boneless chicken breast halves
1 1/2 tablespoons minced onion
2 tablespoons crushed garlic
1 1/2 teaspoons poultry seasoning
1/4 cup soy sauce
2 teaspoons artificial sweetener
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C).
Place chicken in a 9x13 inch baking dish; sprinkle with onion, garlic, seasoning, soy sauce and sweetener.
Place foil over pan and bake for one hour at 425 degrees F (220 degrees C). It's ready to serve!

My favorite way to cook chicken breasts also happens to be low fat. Heat oven to 350. Pound the chicken breasts to make them tender, season liberally with Cajun seasoning, or blackening seasoning. Heat a cast iron or heavy skillet on high and pour in a small amount of olive oil (just to coat). Blacken each side for one minute then transfer to a baking sheet and cook in the oven for another 5 minutes or so until cooked through. Amazingly, these come out tender, juicy and very flavorful!

poach boneless, skinless chicken breasts and make into chicken salad w/ lowfat mayo, celery, salt and pepper. Eat w/ a fork or on bread of some sort.
